Slow Cooker Boneless Turkey Breast

I used a 7lb. bone in turkey breast. Eliminated the dry onion mix completely! Placed breast in pot and poured 1 can chicken broth and a little water over it.. Rubbed butter under skin and seasoned with all the spices listed PLUS sage, poultry seasoning, thyme, rosemary and a pinch of paprika. Put chopped onion, celery, and carrots around the turkey. Cooked on high 1 hour then low for 7. It literally fell off the bone taking it out of crock pot! Under the broiler it went for about 7 mins to brown skin and it was perfect! I've never had such moist white turkey meat! This was great for a small family holiday dinner but I won't wait for the holidays to make it again!

Cranberry Sauce

To get a perfect, not too sweet, not too tart sauce I used 1/2 C coconut sugar and a couple TBS of Truvia dissolved in 1/2 C orange juice and 1/2 C fresh pineapple juice with some of the pulp. Topped the sauce with a walnut. Pretty and delicious and couldn't be any easier!

Chilled Cantaloupe Soup

I made this as written and it is a very tasty and refreshing soup or drink. It definitely needs to be chilled thoroughly so plan accordingly. I will make it again but will cube and freeze my cantaloupe the night before, add a touch of mint in the blender and serve it in a pretty glass with a mint spring on top! Nice for the summer.

Jo-Ann's Power Bars

This is so good you may as well just double the recipe and use a 9 X 13 pan! I used Old Fashioned rolled oats with no problems, omitted the oil and increased the applesauce. I used the regular amount of honey but decreased the brown sugar and probably didn't need any sugar at all with the fruits I used. Dried apricot, cranberries, raisons, and coconut were my additions. I was impressed how they came out looking like those fancy Kashi granola bars in the box.... only much better!

Baked Kale Chips

Ditch the chips and hail the kale! Preparation is much easier if you use a "Misto" filled with olive oil. It's a must have in the kitchen to replace the nasty PAM spray. These are quick, easy, healthy and delicious...my kind of snack!

Mock Tuna Salad

Vegetarian or not, you're gonna love this! It amazingly looks like tuna but has it's own distinct taste sure to please. A quick and easy way to eat healthy chickpeas! I prefer this with crackers rather than on a sandwich.

Healthy Banana Cookies

Guiltless cookies for the young and old and everyone inbetween! I substituted raisins for the dates and added walnuts. I used canola oil but next time will sub applesauce for the oil. Use ripe bananas and they will be sweet enough to satisfy. I find the nuts help with the texture. Skip the cookie aisle in the store and make these instead.

Vegetarian Open Faced Sandwich

Very hearty veggie sandwich that makes for a nice dinner. Husband's only complaint was that he wanted a slice of bread on top. It was already tall so you'd need a big mouth to eat it that way! :P

Vegan Bean Taco Filling

The only changes I made was using a can of Rotel instead of salsa and did not mash the beans. It made a wonderful chunky filling! I served mine in tortillas topped with plain yogurt and cheese. Can't go wrong with this recipe!

Chicken In Basil Cream

Didn't have Pimento or Cream so used a "little" Red Pepper Flakes (for color) and Plain Yogurt... probably healthier this way! Flavorful sauce that's thin but not watery. Fresh basil a must! Cooked breasts with Panko crumbs in butter. Used 3 very large breasts that required longer cooking time so the breading was on the dark side but made excellent "brown bits" for the sauce. Tender and juicy and soooo good smothered with the sauce!!! A keeper!

Chicken Vegetable Medley

ATTENTION ALL BEGINNER COOKS: You can't mess this one up!!! I didn't have all the ingredients called for so I just used the veggies I had in the fridge before they went bad and I had to toss them out. I had carrots, zuchinni, tomato, onion, red pepper, and garlic. I didn't have many of the spices called for either but the half jar of Mezzetta's All Natural Tomato Basil sauce hanging out in my fridge took care of that! Along with the bay leaf, and a sprinkle of dried parsley and lemon dill seasoning (just cause I had them!) made this dish delicious! I used chicken tenders too which cut down on the cooking time. We ate this as is with a slice of crispy french bread. My hubby was so IMPRESSED and frankly, so was I! To the leftovers I added a can of Rotel's chopped tomatos and green chili's (cause they have been in my pantry forever!) and it gave it a nice kick. We will eat that tomorrow over penne pasta! Thanks for this great easy to make and simply no mess up recipe!

Dilly Tomato and Beet Salad

I'm new to cooking so I don't have a good supply of fancy oils in the cupboard YET so I just used olive oil, red wine vinegar, lemon juice, and a few good shakes of a dry lemon dill herb blend and a dash of salt and pepper for the dressing. I have fallen in love with roasted beets so I used them instead of canned. The sweetness of the beets combined with the celery, onion, and tomatoes was wonderful! This cool and crisp salad was perfect for a nice summer day like today! I look forward to making it again when I have walnut oil!
