ATTENTION ALL BEGINNER COOKS: You can't mess this one up!!! I didn't have all the ingredients called for so I just used the veggies I had in the fridge before they went bad and I had to toss them out. I had carrots, zuchinni, tomato, onion, red pepper, and garlic. I didn't have many of the spices called for either but the half jar of Mezzetta's All Natural Tomato Basil sauce hanging out in my fridge took care of that! Along with the bay leaf, and a sprinkle of dried parsley and lemon dill seasoning (just cause I had them!) made this dish delicious! I used chicken tenders too which cut down on the cooking time. We ate this as is with a slice of crispy french bread. My hubby was so IMPRESSED and frankly, so was I! To the leftovers I added a can of Rotel's chopped tomatos and green chili's (cause they have been in my pantry forever!) and it gave it a nice kick. We will eat that tomorrow over penne pasta! Thanks for this great easy to make and simply no mess up recipe!
