Slow-Cooker Chicken Tortilla Soup
After a little tweaking to better suit my own preferences I really liked this soup. I don't like anything too spicy so I cut out the chili peppers and cut down on the chili powder and cumin. I also added more chicken broth. I was nice to let it set in the crock pot all day and come home to a great smelling house and some tasty food :)

Annie's Fruit Salsa and Cinnamon Chips
I have made this several different time and it is always a HUGE hit. I didn't add any sugar to the fruit. Instead of raspberries I added blueberries and either grapes or pineapple. I also did what another reviewer suggested and baked the tortilla shells in a muffin pan to make scoops. And make sure you use butter flavored cooking spray. If you don't it wont taste as good. I have been asked to make this several time because everyone LOVES it!

Eggplant Parmesan II
I loved this! I Changed it a little by making my own kind of "sauce". I just cut up some tomatoes (any kind will really work but I used some slicing tomatoes this time) and cooked them until the juices ran. Then I added some broccoli that I had previously blanched and diced. The broccoli soaked up some of the juices so I would suggest using more tomatoes that broccoli. Then I added some spices (garlic, onion powder, oregano) and a little sweetener to cut down the acidity. I used that instead of buying sauce. I also cut out the Parmesan cheese. This was also the first time I had prepared eggplant and I was very happy with the results.
