Amazing Ribs

Fantastic. I followed all three steps of the cooking process. After reading all of the reviews, it appeared to me that some were having a tough time BBQ'ing the ribs without burning them. I think that the reason is two-fold. First, and probably the main reason for this, was the use of far to much BBQ sauce. The ribs should only be lightly coated. Second, when cooking the ribs, you should not place them over the direct flame of the BBQ. High heat and high flame are two different things. For example, on a four burner gas BBQ, you can maintain 350 degrees by putting two burners on high and two on low. With this, you can cook your ribs over the low flame and get that fire taste.

Chicken Pasta I

I give this a top rating. For a low-cal and low-fat dish, and yes, this is super healthy, it was loaded with flavor. I do most of my shopping at Trader Joe's and this recipe, chicken included, cost me $15.00 to make (eight servings). I went with the original recipe and "tweaked" it to my families likings. I started by cooking the chicken in a dash of Trader Joe's Garlic Oil (if you haven't discovered Garlic Oil -garlic infused olive oil- you are missing out) and held the chicken for dicing until just before the meal (this way the chicken keeps its juices and does not dry out). Like others before me, I added many more mushrooms (one box of pre-sliced) and a whole diced onion. I also added a diced yellow and orange bell pepper and some fresh cut basil. Lastly, I added a ton of fresh garlic (almost a full head) and another can of diced tomatoes (Italian style). Not only did this meal taste great, it presented fantastic as well. All of the colors (red, orange, yellow, green) make a great presentation. I topped off each dish with a teaspoon of both fresh grated parmesan and romano cheese. If you enjoy eating healthy, don't pass this one up. Next time, I am going to make this with some italian style turkey sausage. I can't wait!

Simply the Easiest Beef Brisket

Fantastic! This one is a keeper. I used a bigger brisket and marinated it overnight in liquid smoke and beer. I also added three whole sliced onions. Other then that, I followed the recipe exactly and got raves. This has been requested by friends many times and has become a simple favorite.

Chili I

IF YOU PLAN ON ADDING CORN CHIPS TO THE TOP OF YOUR CHILI, THIS RECIPE IS NOT FOR YOU. This chili is a perfect 10. Doubters don't be fooled; this is not your average, run of the mill chili that we have all gotten used to eating, but what my wife affectionately coined, "the Beef Wellington of Chili." I changed nothing (although I doubled the cubed sirlion and added ground sirlion instead of straight gound beef) and could not believe the wonderful flavors this chili produced. It was unlike anything we had ever tasted. All of the other postings say how good this chili is the next day; I can't wait for lunch tomorrow. Thank you so much Bob, this is by far the best recipe I have ever encountered on allrecipe.com. David and a very happy Wife

Stuffed Shells IV

Fantastic, easy recipe. I decided to use ricotta cheese instead of cottage cheese because my family enjoys the more traditional italian flavors. Also, I sauted the mushrooms, onions and garlic in one pan, the ground turkey in another, and added them together at the end. You must make sure your spinach is totally thawed and YOU MUST strain it through a wire strainer to extract all moisture.

Cuban Beans and Rice

This was an average tasting recipe which I found to be a bit bland. I will make it again, with a few modifications to "spice it up." Cumin and lots of garlic are a must for this, as is some type of hot sauce. This will be a fine side dish to serve along with garlic roasted chicken. David

World's Best Lasagna

My wife was knocked-out by this one. I followed John's instructions to the letter, except for adding 1 TBS of dried hot-chili peppers, and this was by far the best lasagna either of us has ever had. Thank you for sharing. David

Quick Chicken Zingarella

This was a very easy and very well accepted meal. The italian cherry peppers added a great spicy kick to the meal. This dish would have received five stars if it had a little more flavor. I felt as if it was missing one key spice for flavor, perhaps some fresh kosher salt. Lastly, I made this with spaghetti instead of linguini as this was all I had on hand (actually, I forgot to buy it at the store). My one additional suggestion would be to NOT skimp on your jar of spaghetti sauce and buy a top notch brand. Afterall, this is where most of our flavor is coming from.

Banana Crumb Muffins

By no means am I a baker nor do I claim to have any baking skills. Sauces, meats, salads, appetizers, etc., come easy to me. Baking is another story. My baking career has consisted of one mishap afer another; until now. This recipe was so simple, yet when completed, earned raves from my entire family. I follwed the recipe to the "T" and found myself with 10 of the most perfect muffins, ever. Next time I make these (tomorrow) I will add some toasted walnuts to the mix. Wow! I can't believe that I was able to bake something so incredible.

Never Enough Green Bean Casserole

Beef Wellington

I made this for my wife on Valentine's Day. We ended up ordering a pizza. I have no clue what "puff pastry" is, nor did my grocer. She suggested that I use filo dough, which I did. What resulted was a filet mignon that tasted like fried liver and pastry dough. It is a shame that there is only one recipe for Beef Wellington here, so we are all sort of stuck with this one. Live and let learn. Additionally, this meal was far to expensive to make and having to see it go wasted, dampened my spirits further.

Creamy Spinach Casserole

Ali's Greek Tortellini Salad

A very refreshing, perfect and full salad to serve as a complete meal. I added some diced cucumber and used balsamic, while omitting the eggs. Lastly, I threw the red onion in with the mixture to marinate in the refrig. It was awesome!

Wisconsin Bratwurst

I have been making a variation of this recipe for years. The brat is always juicy and so tasty. As with the last reviewer, I too add peppers and onions. I preheat the BBQ to 350 degrees or medium and prepare long skinny strips of orange and yellow peppers, sweet onions, fresh ground pepper, coarse sea salt, 3 Tbs of butter and 3 diced cloves of fresh garlic. Wrapping them carefully in high-heat tin-foil, I place them on the top shelf of my BBQ at the same time the brats are placed into the beer mixture to boil. Be sure to turn the foil at least four times to ensure that no burning takes place. As the brats cook about 20 minutes in the beer and another 10 on the grill, this 30 minute "steaming" of the peppers and onions has never failed me and is so tasty. Lastly, I too would recommend fresh bratwurst. But, like most of you, can't seem to find it. A great alternative is the Johnsonville Beer Brat. Ask your grocer for it by name. This product is hard to find, but once you do, it makes these brats even better as they are already infused with beer.

Gerry's Chicken Enchiladas

Wow! Wow! Fantastic! This was a lot of work and took a long time to prepare (the reduction of the mixture was the reason)...but boy was it worth it. My wife, one week later, begged me to make these again and suggested we take them as a "side dish" to a friend's house for dinner. The only change I made was that adding one can of whole, peeled ortega chili peppers that I had diced up. It was very spicy (which we both like) but surprisingly, the next day when it was reheated, most of the "kick" was gone. Lastly, I suggest finding a Mexican restaurant that makes homemade corn tortillas and buy them there. Nothing beats the fresh taste. This is, perhaps, the best recipe I have found on this site. Crab Cakes III

Very good, tasty recipe. I used fresh crab from my seafood market and then prepared teh cakes using a round cookie mold for consistent cakes. The only reason this got four stars was because of the high price.

Irish Chicken and Dumplings

I was looking for a great meal for a sleepy, cold winter's day and what I found was a good recipe with some flavor. I used the dumplings recipe "Dumplings Submitted by: Carol" and found it a bit bland. I have never been a fan of these types of dishes (which is probably why I did not find it to my liking), but my wife really enjoyed this. I would not make it again, unless she asked me to. David

Garlic Chicken

While the chicken was moist, it was rather bland tasting. Perhaps the chicken should be marinated the night before to infuse more flavor. Also, the bread crumb/parmesan mixture came out a little clumpy(soggy). Average, middle of the road chicken that is just a bit above shake and bake.
