My favorite things to cook
By far, my favorite thing to cook is chicken enchiladas. I use Gerry's enchilada recipe from this site. A very close second would be pizza, which I bbq. I also love to cook turkey, basil and feta burgers on homemade focaccia.
My favorite family cooking traditions
Contests, side by side with my cousin, to see which of us could peel a potato faster. My Aunt thought she was getting one over on us...we knew, but were too competitive to protest.
My cooking triumphs
Pizza dough from scratch, 1st thanksgiving dinner, learning what presentation was and how it applied to plating your meal.
My cooking tragedies
I was making both a brisket and a tri-tip on the bbq for a fourth of July party and half way through the cooking process, ran out of propane.

Stuffed Shells IV
Fantastic, easy recipe. I decided to use ricotta cheese instead of cottage cheese because my family enjoys the more traditional italian flavors. Also, I sauted the mushrooms, onions and garlic in one pan, the ground turkey in another, and added them together at the end. You must make sure your spinach is totally thawed and YOU MUST strain it through a wire strainer to extract all moisture.

Quick Chicken Zingarella
This was a very easy and very well accepted meal. The italian cherry peppers added a great spicy kick to the meal. This dish would have received five stars if it had a little more flavor. I felt as if it was missing one key spice for flavor, perhaps some fresh kosher salt. Lastly, I made this with spaghetti instead of linguini as this was all I had on hand (actually, I forgot to buy it at the store). My one additional suggestion would be to NOT skimp on your jar of spaghetti sauce and buy a top notch brand. Afterall, this is where most of our flavor is coming from.

Banana Crumb Muffins
By no means am I a baker nor do I claim to have any baking skills. Sauces, meats, salads, appetizers, etc., come easy to me. Baking is another story. My baking career has consisted of one mishap afer another; until now. This recipe was so simple, yet when completed, earned raves from my entire family. I follwed the recipe to the "T" and found myself with 10 of the most perfect muffins, ever. Next time I make these (tomorrow) I will add some toasted walnuts to the mix. Wow! I can't believe that I was able to bake something so incredible.
