Southern Pimento Cheese

Making this for a Halloween neighborhood get together. So easy to make and very tasty. I'm going to serve the cheese spread with crackers. Can't believe I didn't have any jalapenos on hand despite living in the SW US. Instead I seasoned it with a dash of dry mustard, white pepper and salt. Next time I'll make it with the diced jalapenos or at least diced green peppers.

Terrific Turkey Chili

I'm not able to eat beans so this is the prefect recipe for me and also the first time I have cooked with ground turkey. In a slow cooker on auto shift I put the beef broth in and started to heat it up. Cooked the ground turkey with the spices suggested in 1 TBSP of oil. Set aside. With the other 1 TBSP oil sauteed the onions, 2 TBSP garlic, green bell pepper, and green chilies (med). Added black bean and corn med salsa. Heated a bit. Added turkey mixture and salsa mixture to slow cooker. Added 1-14 oz. can of whole kernel corn, drained and added diced chili tomatoes with 1/2 liquid. Added 1 tsp chili powder and a dash of salt. Cooked for 5 hours. The family loved it and want me to serve it again. Great way to use ground turkey. debmo

Rosemary and Garlic Simmered Pork Chops

Family really liked this. Only changes I made was using 1/2 cup beef broth and 1/2 cup of Marsala wine as it was by my stove. Do not go by cooking time as stove temps are different. Cooked each side for 3 min and then used a meat thermometer until it got to 145 degrees F which only took 20 minutes to gauge the doneness. 35-45 minutes would have dried out the meat. The juice in the pan was great over the pork as well as a baked potato. dmoneil

Best Beef and Broccoli

Neighbor told me about this great recipe. Only changes I made were to add 2 TBSP of minced garlic to the meat while it cooked and used 2 TBSP of soy sauce; letting folks add more at the table if needed. My family loved it so will make this again. I served it on top of brown rice. Next time I make it I'd like to add some thinly sliced red bell peppers and a dash of red pepper flakes and/or dried ginger.

Super Nachos

Very easy and tasty. Used the suggestion to cook the beans with the meat and taco seasoning. Here in Texas we commonly use canned charro beans (in jalapeno liquid) or borracho beans (in a beer and water liquid)rather than refried beans. Drained the liquid off the beans before adding it to the meat. Did not measure the amount of shredded cheddar cheese, just covered the meat and the chips. No left-overs, darn. debmo

Cucumber Lemonade

So refreshing on a hot summer day. Used 1/2 of a 1 litter bottle of lemon sparking water and 1/2 of a 1 litter bottle of lime sparkling water. Added 1/2 cup of regular water to make the 2 quarts. Then I let it sit in the for a couple of hours before serving. The cucumber flavoring came through nicely.

Curry Stand Chicken Tikka Masala Sauce

Made it exactly as the recipe called and there were NO LEFTOVERS. The spices were just enough to give it the kick it needed. My son and husband gave it a thumbs up and said it was a keeper. Don't let all the ingredients stop you from making it. The recipe is not complicated and does not take long to put together. As my butter (ghee)was clarifying and garlic/onions cooking I mixed all the spices together in a small bowl then added to the recipe when called for. While Step 2 was slowly simmering I used another skillet to cook up the chicken pieces. I did add the optional salt and sugar at the end and the dish tasted as good as any that I have had in restaurants. Thank you Chris for sharing this.

Caprese Appetizer

Have made this recipe twice and company enjoyed it. I cut my grape tomatoes in half and used the small mozzarella balls ,also cut in half using unwaxed dental floss for ease of poking on the toothpick. A definite hit.

Seven Layer Tex Mex Dip

Replaced mayonnaise with 1 cup (8 oz) sour cream. Since I used a deep dish pie pan increased a few of the ingredients: 1 cup sour cream, 2 tomatoes, 1 cup sliced black olives and 1 cup sliced green onion. Otherwise this recipe is great and my dinner group loved it. DONEIL

Cheddar Ranch Dip

This recipe contains almost all of the ingredients I love to put on my baked potato or in potato skins. The only thing I added were some spices. Salt and pepper to taste and a dash of dried onions as I didn't have any chives either fresh or dried available. Mixed it all up. Put a dash of cayenne pepper on top to give the dish some color when I served it. My college age son ate most of it in one setting and didn't save much for my husband and I! Will be serving this at my next party.
