Banana Banana Bread
I've made this twice now and for all the positive reviews, I thought this would be excellent. However, it doesn't have much flavor even after I added cinnamon and nutmeg. Also, I had to cook it 1.5 hrs b/d it's so moist and the top got too dark. It's not bad, but just OK.

Carrot Cake III
My husband is a carrot cake afficionado and he thought this recipe was the best he's ever had. I halved the recipe since it's just the 2 of us and baked it in a bread loaf pan. Then I sliced it into 3 layers horizontally and frosted between each layer. I also made a few small changes in the recipe itself. I used 1-1/2 tsp of cinnamon (instead of 1 tsp), I added 1/4 tsp of Nutmeg and ~1.5-2 Tbsp of diced crystallized ginger. It turned out great!

Roasted Brussels Sprouts
I made these last night and my husband LOVED them. Every bite would make him exlaim, "These are SO good!". I followed the recipe exactly. I also thought they were good, but I haven't had brussel sprouts before, so I guess I didn't appreciate how bad they can sometimes turn out and that these turned out great. They were so flavorful and tasted as though there were lots of ingredients (even though it was just oil, salt and pepper). Will make again!
