Glazed Apple Cookies

A good cookie. I added some extra spices and drizzled the frosting over the top. They were gone quick.

Rich Chocolate Frosting

I won't buy canned again. I never attempted or thought to make my own...just seemed easier to buy it but this has changed my mind. It's even fool proof. I started making it when I remembered that I had wanted to half the recipe. I ended up using 4 sticks of butter, 5 cups powdered sugar, 1.5 cups cocoa, vanilla and some milk. Still tasted great. More like milk chocolate which was an even bigger hit.

Coconut Cream Cake I

This was an awesome cake recipe. I did use coconut milk instead of cream because some people eating it are watching their sugars. I ended up tossing about 1/4 to 1/2 cup of the sauce out because it stopped seeping in and was just running to the edges. The cake was still super moist but not horribly soggy (except one corner peice) Normally I bring leftovers home from BBQ's but not this time. I even have my second one in the fridge right now for my Mom to try. If you love coconut, you'll love this cake. Superb! Would love to try it with banana cake or chocolate cake :)

Strawberry/Rhubarb Crumb Pie

This is only my second strawberry rhubarb pie so maybe it's the norm, but it was very soupy but very delcious! I used scottowels to sop up the liguid so the pie wouldn't get soggy. I'm sure there is a trick out there to fix this :) Didn't affect the flavor though and my Mom said she just licked up the liguid. She also said it was the absolute best pie she ever had. Lots of rave reviews....going to keep!!

Special Buttercream Frosting

Excellent recipe! I try a different frosting recipe every time I make cake but the search is over. Even my anti-frosting really liked it. Just added cocoa powder to make chocolate. I also added one tsp of butter extract. Otherwise I followed the recipe exactly. Not overly sweet and not greasy in my mouth.

Judy's Strawberry Pretzel Salad

Very yummy. The perfect balance of salt and sweet....not a strong cheesecake flavor if that's what you are looking for. I increased the pretzels to two cups and made sure not to over crush them. I think if they were crushed really fine it would be harder to get out the pan. I also used some non-stick spray to make it easier to get out. I increased the jello to 9ounces but that filled the pan to the tippy top and made it a little tricky to get in the fridge without spilling but it turned out good. I thawed the berries enough to slice and then refroze. Topped with cool whip. Good stuff!

Iced Pumpkin Cookies

YUMMY!! This recipe can stand on it's own and it's wonderful. I like to take recipes and make them my own by changing things up and the changes were fantastic also. A great base cookie that can be built upon. I add 1/4 tsp of pumpkin pie spice. I also swapped out 1/2 cup of the white sugar for brown sugar and added 1/4 tsp maple extract to the batter. The dough is kind of sticky but not hard to work with. I just used my finger to push it off the spoon. With the glaze I left out the butter and added maple extract and cinnamon. I drizzled just a very little bit of it over the cookies because my kids found it to sweet if I used a lot. My 10 year old made me promise not to lose this recipe :)

Brisket with BBQ Sauce

I was a bad girl, I didn't follow the directions. I can tell though that if I would have this would have been great. I poured the liquid smoke over the meat in a baking dish and let it marinate and then cooked it in the same dish. Then I added the BBQ sauce to meat. Then the liquid smoke that was poured over the meat mixed with the sauce and made for a salty concoction. The meat by itself and the BBQ sauce by itself was great so next time I will follow directions to a T.

Best Toffee Ever - Super Easy

YUMMY!!!! So rich and decadent that one batch can feed a lot. I used chopped peanuts. I also followed the tips on cooking to 300 and adding a little vanilla. Might try the brown sugar idea next time just to see how it tastes. Good recipe!

Annie's Fruit Salsa and Cinnamon Chips

AWESOME! I've been making this for a couple years now. Easy to make but time consuming with all that dicing especially when making it on a large scale. I don't find the need for the sugar or preserves but sometimes I taste before I add the sugar and only add if it needs it. Also any combo of fruits seems to be possible. I generally use apples, grapes, strawberries and kiwi. The cinnamon chips are such a yummy dipping option. A low cal treat that hits the spot like a fruit pie would! I'm on weight watchers and I can get 12 chips (2 one pt tortillas) and 1/2 cup of the salsa for 3 points!

Chewy Crispy Coconut Cookies

YUMMY!!!! I made these just as the recipe states and they were wonderful. My family ate them quicker then I could make them so I ended up having to make another batch. A good coconut flavor...perfect. They even replaced my hubbys favorite cookie.

Kyle's Favorite Beef Stew

I'm not sure why some people thought this was bland. Everyone in my family, which includes 6 kids, loved it. I made very few changes to the recipe. Maybe more quality ingredients or type of onion, soup mix, wocestershire sauce, etc makes a difference? Only thing I would change next time is more carrots. The changes I made this time were slight and just a personal preference. I added a bay leaf in with boiling water and soup mix and then left it in the crock pot while it cooked. I used mini bella mushrooms because my store didn't have button mushrooms. Lastly, I used a sweet, soft red wine because that's what I keep on hand to drink. Delicious and will make again for sure! Would be great over mashed potatoes as well.

Maritime Blueberry Buckle

Delcious! I one and halfed (not double, lol) this recipe and baked it in a 13x9 casserole dish. It was very moist and flavorful and much better then the buckle I tried last year. It's very much like a blueberry muffin but the cake part is a little more cakey then a muffin.

Raspberry Truffle Fudge

This was very good, a keeper. Much easier then most fudges and didn't require stirring and perfect temps. I think a cherry flavored liquer would be good also.......fool proof!

Banana Split Cheesecake

I've made this 4 times in the last 2 weeks. My family loves it and everyone wants to me to make it now. I did use a different graham cracker crust because I couldn't get recipes crust out of my pan. The graham cracker crust on this site that you had to bake was good. A few tips would be to use 20oz of pineapple. Put the pineapple in a strainer and really get the juices out so your pie doesn't get soggy. I also rinsed and dried my cherries so the red wouldn't run in the cool whip. 8oz of cool whip was plenty. My Mom made the comment that strawberries were missing so I now drizzle strawberry syrup over the filling before the banana and following toppings! Delicious! One more thing, I just used a 9 inch pie plate and you need a strong mixer, I burnt one up making the cream cheese filling. Now I add a tablespoon of milk and I let the cream cheese soften.

Mom's Zucchini Bread

A good bread! I added some extra spices and used replaces half the oil with applesauce. People raved over it being good. Will definitely make again :) My kids ate three loaves of it in one day!

Chococonut Chip Cookies

A soft and yummy cookie. Not a very strong coconut flavor in my opinion but my family and friends thought they were perfect. One made the comment that it was like eating a Mounds candy bar. Will make again and might toast the coconut before hand to see if it enhances the coconut flavor.
