Chicken and Broccoli Braid

Reviewed: Dec. 11, 2007
I loved this recipe and just had a couple changes which I think made it excellent. I marinated & sauteed the chicken with garlic, olive oil and garlic salt. In the same pan, I briefly sauteed the garlic, broccoli, onion and pepper. I think this is essential otherwise your veggies will be too crisp. I also used 1/4 sour cream and 1/4 of fat free plain yogurt as I ran out of mayo. Lastly, I sprinkled garlic salt & parsley over the braid after I brushed with egg white. This makes for a lovely presentation and adds delicious flavor.

Key Lime Cake II

Reviewed: Oct. 15, 2007
My guests and I loved this cake! I will agree that its not very strong on the key lime flavor if that's what you were looking for, but its an excellent lemon cake. For the glaze, I used 1 c. sugar and key lime juice to make the glaze the right consistency. I also got tired of squeezing the key limes, so used a little lemon juice for the glaze. I baked these in mini bundt pans for about 25 minutes and drizzled half the glaze while warm and the other half while cool so that it looked pretty! I will definitely make this again.

Slow Cooker Pulled Pork

Reviewed: Sep. 20, 2007
This was my first recipe with my new slow cooker and it was fabulous! I poked holes in the pork & rubbed it with bbq spice rub (Weber Grill) before placing in the slow cooker. Following previous reviews, I removed the pork after 6 hours, shredded it and added Sweet Baby Ray's bbq sauce. I cooked for an additional hour on low to let the sauce soak in. This was delicious!

Egg-Free Low-Fat Oatmeal Cookies

Reviewed: Mar. 7, 2005
I love this recipe and have used a variety of dried fruits in addition to raisins. A favorite of mine is adding dried apples. I also substituted 1/2 whole wheat flour for 1/2 of the allpurpose flour. Turned out great!

Soft Oatmeal Cookies

Reviewed: Dec. 8, 2005
The oatmeal raisin cookie recipe I have been searching for! These cookies are great if you like soft, chewy cookies. I only did a couple of variations...I like oatmeal raisin cookies so I used a cup of raisins. I soaked the raisins in the egg, vanilla and a 1/2 tsp rum to plump them up and also added a little extra cinnamon. Delicious!

Slow Cooker Chicken Taco Soup

Reviewed: Oct. 30, 2007
This was delicious! I used Bill's taco seasoning as recommended and also used chicken broth instead of the beer. Although, I am still curious about the beer so may try it in the future.

Caramel Bars

Reviewed: Jan. 3, 2008
These were absolutely delicious! A good break from normal cookies and rich, but not too sweet. I used a little more oatmeal and less butter as other reviews suggested. I also added some white chocolate chips since I had them on hand. Would definitely make them again!

Camp Cornbread

Reviewed: Nov. 24, 2005
I accidentally used a 14.5 oz can of cream corn instead of the 8 oz. The cornbread still turned out fabulous, albeit a little bit moist. I used an 8x8 pan, as suggested by other reviews, and Jiffy cornbread mix. I like sweet cornbread, so I stuck with the 1/2 cup of sugar. This is a great cornbread recipe!

I served the crab salad on toasted hoagie rolls- absolutely delicious! I ran out of sour cream, so I obmitted it but it still turned out great

Fancy Brownies

Reviewed: Dec. 21, 2002
Very good! I altered this recipe quite a bit though. First, I used yellow cake mix. After baking the first layer of crust, I topped it with Rolo's cut in half (cut face down) which provided a melted caramel layer. Didnt use quite as much choc chips and toffee. Came out very well!

Awesome and Easy Creamy Corn Casserole

Reviewed: Nov. 26, 2007
I made this for Thanksgiving & it was easy and delicious! I found this to be more of a corn bread type consistency, although I drained the corn juice. I also used low fat sour cream and added a 1/4 cup of sugar. I will make this again although next time I will decrease the amount of butter.

Oatmeal Raisin Cookies IV

Reviewed: Mar. 3, 2005
I like this recipe, although I'd have to agree with a previous review that they are somewhat bland. I think next time I make them, I'll double the amount of cinnamon and add a little sugar. Mine also came out quite flat!

Buttery Soft Pretzels

Reviewed: Jan. 3, 2006
These pretzels came out looking fantastic and tasted wonderful. I did find that I needed to add quite a bit of additional water to make the dough. I had no idea if they would turn out or not, because the dough was so dry. I also made mine a little thicker so had to increase the baking time. I'll make again! Update: I made this recipe again with 4 cups of flour and it was perfect. I also shaped these into rolls and used them for turkey sandwiches. Yum.

Colleen's Slow Cooker Jambalaya

Reviewed: Oct. 15, 2007
I made a couple modifications to this great recipe. First, I used 3T of the Creole Seasoning Blend on this website instead of the spices here. I also used cajun style sausage and added 1/2 c. rice and uncooked shrimp 30 minutes before it was done as others suggested. I also only used 1 14.5oz can of diced tomatoes since I didnt read the recipe carefully, which ended up being fine. In the end, right before serving, I added another 2 c. of cooked rice to the mixture to soak up some of the excess broth. This was a great recipe though next time I would cut back on the cayenne pepper!

Bar Cookies from Cake Mix

Reviewed: Jan. 7, 2008
I used yellow cake mix, 1/4 c of water (4 tbsp) and half white chocolate, half semi-sweet chocolate chips. Next time, I would use less chips - maybe 1.5 cups as the 2 cups called for in the recipe is a little overwhelming. Also, I followed suggestions to bake this for about 22 minutes. The bars were seriously underdone in the middle so next time I will probably bake it for about 30 minutes. Other than that, this is a simple and delicious recipe! Tastes like a cookie cake!

Chicken Milano

Reviewed: Jan. 2, 2003
I thought this dish was delicious! I added mushrooms like the other reviews suggested and used a little less butter. I also dipped the chicken in egg white and then in Italian Bread Crumbs w/ garlic salt before pan frying the chicken. The breaded chicken added a little zip to the dish which my family loved. I also ended up adding 2 tbsp of flour to thicken the sauce. Great recipe!!
