Creamy Au Gratin Potatoes

Risotto with Sun-Dried Tomatoes and Mozzarella

I pulled this recipe from Allrecipes.com 4 years ago to try my hand at making risotto for the first time. My family loves this recipe so much that this is the only way I made risotto and we make it on a very regular basis and I never look at the recipe anymore. I've actually found myself making extra so we have it leftover. I keep chicken stock in the house so I use that instead of vegetable and although it's very good with mozzarella cheese, I have a fondness for making it with fontina instead.

Chocolate Truffle Cookies

LOVE these cookies so much that I made two batches in the last week so that I could send them in care packages to both kids at camp for sharing and they were a hit. They are a scrumptious chocolate cookie. A bit messy to roll, but well worth it. Last batch I was short one square of unsweetened chocolate so I substituted semi sweet, still just as good.

Vegan Black Bean Soup

My 12 year old son started making this recipe for the family last year and we've all enjoyed it each time he makes it. We are not vegan so we actually like the flavor a bit better with chicken broth but we've had it with vegetable broth too and it's been good as well.

Chicken Pot Pie IX

We LOVE this chicken pot pie in my house and I especially love freezing one to bake later, it' always comes out so good. I use the Pie Crust IV recipe, which always comes out perfect for me to make this a delicious family meal.

Chocolate Frosting I

This is my go to chocolate frosting recipe, I've been using it for over a year and it is just the right balance of chocolate and sweetness for me and my family. I always double the recipe because one recipe isn't enough for my chocolate cake.

Joey's Peanut Butter Cookies

These got a thumbs up from my family. I made half the batch with chocolate chips and half without because we like chocolate but I wanted to try them without too since we were sending them with a care package to camp. I used half creamy pb and half crunchy, next time I'll use all crunchy. My only one small issue was the dough was really soft and difficult to roll. They baked up just fine though. Most of the ones with chocolate I did as drop cookies because of the soft dough.

Barbecue Ribs

Excellent! My mother in law said it was the best ribs she had ever had. I realized when doing this review that I had forgotten the Worcestershire sauce in my haste of making the marinade and they were still excellent. I only baked the ribs and they were tender and juicy. I used Heinz Chili sauce. I looked up and down the Mexican aisle and sauce aisle at the store and there are no sauces called chile sauce just pepper sauces. I also decided that 1/2 cup of any pepper sauce was probably going to be a lot more "heat" than my family would have liked. I think we'll like it with the Worcestershire sauce too so we'll be sure to add that next time.

Breaded Dijon Pork Chops

My husband and I really enjoyed these pork chops, what a simple way to make chops flavorful. I used substituted rosemary for sage because that's what I had, but I can see how this could be used with any herbs that you like.

Pie Crust IV

Wow, this is the first time that I've actually had success at making pie crust and not being totally frustrated. I'm not sure the ingredients are all that different, but the mixing instructions were very helpful. Also was the review that said she used 6 Tablespoons. I suspect I've under added water in the past.

Scrumptious Penuche Frosting

Mine didn't thicken up a lot, but it tasted delicious and was great for frosting the 13x9 molasses cake I made for my husband. The cake was his Grandma's recipe and he was yearning for a taste of his childhood, but all his aunt could tell me about the frosting was that it was brown sugar and butter. It didn't turn out to be the same as Grandma's, but his Mom and Aunt said this was better than the original on the cake.

Eggs Benedict

Very yummy! I did have to make the hollandaise sauce twice though, my pan was too hot the first time and the eggs cooked too quickly. The second time I started with the pan cold and it came out perfect and lesson learned. I did reduce the lemon, but that was mostly because my reconstituted lemon juice was old and I was unsure of it's quality. I'll try again sometime with fresh lemon juice and I bet it will be even better.
