Apple Cinnamon Oatmeal Bread

Very good flavor. Substituted light margarine for the butter and 1/2 the sugar with splenda and it worked great. Easy to make.

Beaker's Vegetable Barley Soup

Cheery Cherry Bread

Amazingly Easy Irish Soda Bread

good soda bread - the outside is really crusty & crumbly. I made this twice - 1st time according to recipe and it was too dry and not sweet enough. I did use a convection oven, so this could be part of the reason why it was so dry. 2nd time I added double the amount of sugar & an extra 1/2 cup of buttermilk and it worked out great! Oh - raisins and/or currents are definitely a must! I added about 3/4 c raisins. Overall - keeper, easy recipe.

Banana Crepes

delicious! If you can find premade crepes this recipe is very easy and quick to make! The banana is good, but I think next time I will try broiling the bananas with a bit of honey or sugar first before putting in the crepe.

Asiago Dip with Crostini

Very good and easy to make. I simply chopped sundried tomatoes to make "sprinkles." A bit greasy after sitting for a while. I added more asiago than the recipe called for! You can never have enough cheese. Will make again.

Rich and Delicious Banana Bread

Very good banana bread - moist, flavorful, easy to make! I added 1 tsp vanilla extract & 1/2 tsp cinnamon as suggested by many others. Took exactly an hour in my oven. I substituted Olivio margarine instead of shortening (packed with omega 3s & trans fat free!). Was a bit worried about not adding eggs, but the recipe worked! The best use of almost rotten bananas ever!

Estrellita Salad

Pretty good! I made this for a BBQ & everyone enjoyed it. I personally gave it 4 stars because it was good, but not awesome (+ I'm picky : ) I was expecting some great flavor combination & really it tastes like it sounds - veggies & cheese in catalina dressing with corn chips on top. Might try the black beans suggested - I think that might work better than the olives. Also for fun this could be a really different salsa served with large corn chips for scooping instead of the fritos!

Amaretto Cake

Tasty! Just like rum cake (except it's amaretto). I adjusted the glaze. I didn't want a soggy, wet cake (which I sometimes get with really liquidy glazes). So I added another 2c. powered sugar & 1/4 tsp almond extract to the glaze to make a cinnamon bun glaze consistency. I then poured it on the top of the cake & let it run down the sides. Didn't cover it for a couple hours to let the glaze harden slightly. The cake was nice & moist with a sweet frosting. The only negative thing about the recipe - the amaretto made the glaze taste like perfume. It tasted better on the cake, but next time I will experiment with making a glaze with milk & powdered sugar & adding just a couple T of amaretto or maybe just some almond extract.

Summer Potato Salad

Very good! This is not your average potato salad - it has a nice clean, lemony taste. Will be great for summer BBQs. I used fresh lemon juice & next time will decrease to 1/4c. Just a bit too lemony. I will also decrease the amount of parsely (I used dried since I forgot to buy fresh) 3T was way too much! Almost gave the potato salad a greenish, grey look - almost like I let my potatoes go grey (which I didn't). I added extra celery & green onion - I like a crunchy potato salad. Overall, a keeper recipe!

Candied Chicken Breasts

Very tasty! I agreed with other reviewers - the chicken only needed to be baked for about 45 minutes, the breading on the chicken was soggy (I'll take the foil off next time the last 15 minutes. I added some garlic powder to the breadcrumb mixture & I used pineapple juice from the pineapple rings in the sauce instead of water. This dish was similar to BBQ sauce and sweet & sour sauce, so it definitely is different! Will make again.

Slow Cooker Barbeque

Not quite sure what happened with this recipe, but we didn't like this at all. The meat wasn't tender enough after 8 hours & the BBQ sauce tasted bland & almost burnt (I used Sweet Baby Rays - one of my favorites!). If I make this again, I'll cook the roast in beef broth w/onion & spices all day, shred the beef and then add BBQ sauce at the very end.

Chicken Makhani (Indian Butter Chicken)

Fabulous! I doubled the sauce- we love lots of sauce to eat with the basamati rice. Used light butter & chicken breasts & it worked great! Pretty close to Indian restaurants, but I agree Tandoori chicken makes it better. Might try grilling my chicken next time. No need to buy ginger garlic paste, just add approx. 1/4 tsp ground ginger to crushed fresh garlic.

Spanakopita II

Pretty good! Compiled other reviewers advice & added about 3 cloves of crushed garlic & about 1 T lemon juice. Didn't have enough feta cheese, so I added some grated parmesan - it worked just fine. I didn't have the patience to make triangles, so I made little Greek cabbage rolls! All in all, a good appetizer recipe!

Daria's Slow Cooker Beef Stroganoff

Good recipe, but I felt it needed more flavor. I added more worcestershire, garlic & a whole onion. Accidentally used fat free mushroom soup & it worked great! Towards the end of cooking I added two capfuls of gravy master for color & flavor as well as cornstarch to thicken. Way too soupy! I served it over garlic butter egg noodles. Delicious!

Sausage Egg Casserole

Excellent breakfast casserole! Used a whole 1 pound tube of sausage. Was afraid that the cottage cheese would give it a weird texture & appearance, but it baked right in to the casserole! Not a huge fan of the mushrooms, next time will make with spinach & some red bell pepper. Yum!

Anniversary Chicken I

Excellent! I've had smothered chicken many times at restaurants & loved it. I knew there had to be something more than cheese, bacon & green onions. I thought it was BBQ sauce, but the secret is the teriyaki & ranch combination! I marinated the chicken in teriyaki sauce & chopped garlic for an hour before cooking. Not sure if this made a huge difference, but the chicken turned out moist and super flavorful! Definitely a keeper recipe.
