Indonesian Satay

I made this twice last year, and while I loved the chicken, I was not so crazy about the sauce. It was OK, but not great. I recently came across Stephanie M's "The Best Thai Peanut Sauce" recipe, and I used that in a stir fry...the sauce was just perfect, truly wonderful. So, the perfect marriage is this chicken marinade and "The Best Thai Peanut Sauce". I actually came here to post this, and I saw that Stephanie basically said the same thing the other day!

The Best Thai Peanut Sauce

This was delicious in a peanut chicken stir fry, but I plan on using it for the next time I make satay! It was even better the next day, as I dipped my finger and ate some, then mixed the rest with some leftover rice. Oh man, this sauce is great!! Oh, I also halved it, and it still made enough for 6 - 8 people. I HIGHLY RECOMMEND this recipe!

Double Quick Dinner Rolls

Now THAT was some messy dough/batter. Ugh, it was like working with hot, chewed bubble gum. I wonder what I did wrong? I added more and more flour, but didn't want to bake bricks, so I took a chance and made them anyways. They were pretty darn tasty! Was it worth the mess? Jury's still out on that one. I also found they didnt rise that much...maybe this recipe should have called for Quick Rising Yeast? I noticed there was no step for activating the yeast bebfore mixing it in with the other ingredients, that's why I wonder about the yeast. I omitted the onion powder too, but that was the only change I made...will probably make again, and I rated this recipe mostly on the results - some pretty tasty dinner rolls, all in all.

Jamie's Cranberry Spinach Salad

My favourite "fancy" salad! ;-) It is delicious and I crave it often. Very suitable for a holiday dinner or even a summer dinner. We just loved it! We also cut the sugar in half, mind you.

Egg-Free Dairy-Free Nut-Free Cake

Just amazing! Our daughter may have an egg allergy, so while we wait to find out for sure, we have to avoid eggs. I came across this recipe and we made 10 cup cakes out of it! I also used an eggless frosting that I hope to post soon. This cake was very moist and it didn't last long! We made this for our daughter's First Birthday Party and kids and parents just raved. Thank you Bridget!

Beef and Barley Soup III

This soup was quite hearty, so I increased the beef stock to 12 cups from 10. Also, the recipe ingredients did not list the Bay Leaf, although the instructions do. Also, the instructions don't tell you when to use the garlic that is listed in the ingredients, so I sauteed it with the celery, onions and carrots. I used Campbell's Beef Broth (Low Sodium a must!) in the boxes, NOT the cans...I didn't want the tinny taste that usually stems from a can. Was a good soup, but I imagine that it will be much more flavourful the next day.

Chili con Carne II

A great chili recipe! We tried it 2 weeks ago and just made a double batch today. Yum! I did find that it was a bit too cinnamony, so when I doubled the ecipe, I only used 3 cinnamon sticks instead of 4. That did it. Also, to add some more heat I added 2 jalepeno peppers and 1 additional chili pepper in the double batch. A nice burn, but not screaming hot. Not so hot that you need a cold glass of water nearby, but a nice smooth heat that you notice. A few extra shakes of cumin and chili powder as well as doubling the garlic made this the best chili I have ever tasted!
