Quinoa and Black Beans

Simple & nice blend of flavors. I used half the amount of beans, a bit more corn, and double the amount of seasoning (it's seriously bland without the extra spices, I even added some chili powder for a hint of heat.) I made some siracha/soy sauce marinaded broiled tofu, and it's a nice healthy meal.

Glazed Lemon Bundt Cake

Really yummy! Definitely make the cake more lemony; try adding some lemon juice. I also thickening the glaze a lot with a couple cups of powdered sugar, since it really was too watery. I added butter and more lemon juice to the glaze as well. Coat the pan with butter and sugar (rather than flour), and the outside comes out with a light golden crisp, delicious! I cooked my bundt for only 45 minutes too, so keep an eye on it.

Banana Cupcakes

SO YUMMY! Flavors of banana bread, but light and airy like a cupcake. I substituted butter for shortening, then added a couple teaspoons of mayonnaise to keep the tenderness. I also used a mix of milk and lemon juice for buttermilk. I added a touch of strawberry extract to the frosting, then lightly topped with coconut flakes and chopped walnuts. Really delish!

Eggplant Parmesan II

This is a good & simple recipe, and I love that it's baked rather than fried. The key is the cut the eggplant very thinly, and precook them for 7 min on each side before layering. I only used 12oz of mozzarella and 1-and-a-half large eggplants, which was plenty for a 9x13 casserole dish.

Spicy Garlic Lime Chicken

I used skinless thighs, and added a little chicken stalk and diced fresh garlic to the pan. I squeezed another lime half over cooked chicken, the popped them in the broiler for about a minute to crisp up the top. It's very tasty, but I wouldn't consider it spicy at all.

Chocolate Strawberries

What's better than dark chocolate covered strawberries? Ones that are also layered with coconut, pecans, and melted butterscotch! "Double-dipping" is a great way to add intrigue to an already delicious classic. Butterscotch chips don't melt too well, but you can still swirl some on there--it gives a great marbleized effect & tastes great. Keys to dipping any fruit--> use good quality chocolate (dark melts the best), dip fruit only when they're thoroughly dried, and have a wax paper-lined cookie sheet ready to pop into the fridge once all the goodies are dipped.

Pumpkin Chocolate Dessert Cake

SO DELICIOUS! This was one of my first baking ventures, and it turned out wonderfully. It's very easy to make, and the cake is rich and moist. The glaze creates the perfect combo, and I suggest waiting for it to thicken (off of the heat) for a few minutes before topping on the cooled cake.

Blueberry Bars

Very yummy. I've made these with a variety of pie fillings, and they really all taste yummy. It is a bit dry, but I enjoy it. The texture is almost like a scone, so it's nice served with a morning coffee or tea.

Diane's German Chocolate Cake

Big hit for my boyfriend's birthday! The frosting is perfect, and the cake has great flavor. The cake is a bit dry though, so I'd suggest adding some apple sauce or sour cream before baking.

Peanut Butter Cake II

The frosting is AMAZING--it has that homemade taste and quality. But the cake needs improvement. With a frosting like this, it deserves something more than a box-cake mix base. Overall, very tasty & not overwhelmingly peanut-buttery.

Special Butterscotch Chip Cookies in a Jar

These are a favorite amongst family & friends. I initially found this recipe when searching for a 'cookies in a jar' gift, and decided to make them for myself before gifting. They are REALLY really tasty. I recommend to roll the cookie dough into just-smaller-than-a-golf-ball size, and NOT flatten it before baking. They spread out nicely in the oven on their own. Also, I always remove the cookies 1 minute before they appear done--they firm up quite a bit once out of the oven. Enjoy!

Apple Bavarian Torte

The torte is beautiful! Like others, I increased the filling by a 1/3, and i'm glad I did. I was able to layer crust, filling, apple, filling, apple beautifully. I only needed 2 medium Golden Delicious apples, thinly sliced. I added a cinnamon sugar glaze (1/2 cup water, 1/2 brown sugar, 1 tsp cinnamon boiled over stove) at the same time as the almonds, and it bubbled SO nicely in the broiler! Basically, MAKE THIS TORTE, IT'S DELICIOUS :)
