Quinoa and Black Beans
Simple & nice blend of flavors. I used half the amount of beans, a bit more corn, and double the amount of seasoning (it's seriously bland without the extra spices, I even added some chili powder for a hint of heat.) I made some siracha/soy sauce marinaded broiled tofu, and it's a nice healthy meal.

Eggplant Parmesan II
This is a good & simple recipe, and I love that it's baked rather than fried. The key is the cut the eggplant very thinly, and precook them for 7 min on each side before layering. I only used 12oz of mozzarella and 1-and-a-half large eggplants, which was plenty for a 9x13 casserole dish.

Spicy Garlic Lime Chicken
I used skinless thighs, and added a little chicken stalk and diced fresh garlic to the pan. I squeezed another lime half over cooked chicken, the popped them in the broiler for about a minute to crisp up the top. It's very tasty, but I wouldn't consider it spicy at all.
