This has to got to be the best chicken enchiladas I've made!! And believe me, I've all tried all kinds of recipes off this site and others that called for taco salsa, some called to make your own salsa, well you get the picture. But I have to say this recipe was easy to follow and came out so tasty in the end. I will say that the sauce could easily be doubled since most of it seems to evaporate in the oven. My husband likes his food crispy so I kept it inside the oven for the full 35 minutes...Oh, and yes, this recipe may not be 100% authentic but so aren't many, many others on the Internet. They are chicken enchiladas, every cook has a different take on them!! I prefer these because they are lower cal considering you don't have to dip the tortilla in oil and you can even substitute it with whole wheat flour tortillas! Give this recipe a try and you'll see what I'm talking about!
