Cha Cha's White Chicken Chili

I made this for a chili cook-off competition in my office and WON! I followed the recipe exactly as instruction except I let mine simmer in a slow cooker for about 4 hours on low after I had cooked in a stock pot. Add sour cream and tortilla strips and you'd swear it was from a restaurant!

Tuna and Chickpea Salad

I make this quit a bit but always use albacore tuna in water. I also add 1/2 diced red pepper, 3 stalks celery (diced), balsamic vinegar (2 Tbsp) and olive oil (2 Tbsp) to jazz it up! Always refreshing and very filling.

Spence's Pesto Chicken Pasta

I really liked this recipe because it was simple and quick. I doubled the recipe and added more garlic and sautéed onions. Oh and I also cooked two slices of turkey bacon until crispy (bacon makes everything better) to flavor the spinach. And I made a whole packet of pesto sauce. I think this recipe is open to variations of any vegetables you have on hand.

Cheese and Sausage Stuffed Zucchini

I've made this recipe several times and it turns out fabulous every time. I follow the recipe almost exactly EXCEPT I substitute ground turkey for the sausage however, I've made it both ways (I'm just not a huge sausage fan). I also put my zucchini in the microwave for a few minutes while I cook the stuffing. I recommend two very large zucchini's because this makes a lot of stuffing.

Six Can Chicken Tortilla Soup

I used canned chicken breast to save time. I also sautéed a small onion w/ garlic and a bit of olive oil in a large pot then added the rest of the ingredients. I added ground Cayenne, cumin and juice of a half of a lime. Then, I simmered for about 30 minutes. I served with sour cream, chopped avocado and tortilla chips.
