Chuck Wagon Hash

I made this tonight for dinner. I used Italian seasoning as another person suggested. I skipped the red pepper flakes. I don't use cream soups (hubby is allergic to the MSG in them) so I substituted a quart of homemade brown gravy and a can of mushroom pieces for it. I used 2 cans of corn & added 1 can of black beans for extra color. I used hash browns instead of rice, and when I went to put it into the pan, I realized I'd forgotten to cook the onions with the burger. So I put half the mixture into my 13x9 pan, then sprinkled it with the chopped onions, mushrooms, and 1 cup cheese, then put rest of mixture on top, cooked it at 400 degrees F (am at about 7000 altitude) for 25 minutes, put another layer of cheese down, cooked another 5 minutes til cheese is melted, then fed it to my family. We are 7, and between hubby & 2 older boys, that size pan empties FAST. It is a bit bland but we keep salt & pepper on the table for everyone to make it taste as they want it.

Pudding No-Bake Oatmeal Cookies

I cut the sugar in half and the butter down to half a cup, I also used regular oats; i doubled the recipe though to usethe full can of evap. milk. I boiled the sugar, butter, milk, and pudding mix on my stove as well. I'd planned to use these as lactation cookies, added 1/2 c. ground flaxseed meal and 1/2 c. brewer's yeast, but even with those added (plus 1/2 c. ground coconut), I find the cookies too sweet and quite soft - I prefer my no bake cookies firmly set up. If I use this recipe again, I am decreasing the butter to 1/4 cup, and using a sugar-free pudding mix, plus adding peanut butter. I am giving the recipe 3 stars because it was just ok, not great. But my kids will help me eat them.

Broccoli Chicken Casserole I

I love this recipe & I read many of the comments left by others, but I put my own twist on the recipe. Hubby is allergic to MSG, so I try to avoid cream soups but.... we eat them sometimes. I used 5 diced chicken tenders & 1/2 cup shredded turkey, 1 can of cream of chicken soup, 1 cup sour cream, 1/2 c milk, 2 c. shredded colby jack cheese, and 1 package stove top stuffing, made up. I mixed the soup, sour cream & milk together, & spread it on the bottom of 9x13 pan, then spread 2 heads cooked broccoli florets over that, then half the cheese, then the stuffing then the rest of the cheese. I covered it with foil, then last 5 minutes of cooking time I removed the foil and broiled the cheese.. Next time I make this dish, I plan to make a [from scratch] white sauce w/ chopped mushrooms and make rest of dish the same except for the stuffing, I will omit the stuffing and use cracker crumbs & melted butter -- to make a more MSG-friendly dish for my hubby.

Apple Avocado Salad with Tangerine Dressing

My family & I love LOVE this salad!! I made it differently than the recipe shows because I was missing some of the ingredients. I chopped 1/2 head of iceberg lettuce, 1 red apple (with skin left on for color), 1 avocado, 1/2 c. walnuts, 1 20-ounce can of pineapple tidbits drained (juice reserved) and mixed together for salad. For the dressing I used the reserved pineapple juice, 2 Tbsp oil, 1 tsp. lemon juice, 1 Tbsp. sugar, 1/8 tsp salt, 1/8 tsp garlic powder and mixed all together for the dressing. I served the dressing on the side of the salad (thinking I might have had excess), good thing because I had about 1/2 cup leftover. I plan to make this salad many times again, next time I'll make it according to recipe, then next time I'll use dried cranberries & canned mandarin oranges & baby spinach.
