Turkey and Quinoa Meatloaf

My new favorite meatloaf! I have had this recipe for over a year and was hesitant to try it because of the negative reviews. I really struggled with how to procede: should I try the recipe as written which is my preference or heed the advice of reviewers? I decided to try it as written and after reading several complaints about the amount of hot pepper sauce, I deceased the hot pepper sauce by half. My young kids can't handle too much spice anyway. This was the right choice for us. I could still taste the hot pepper sauce but it didn't overpower. I also used Frank's hot sauce which is milder than Tobassco and I can see how a full 2T. of Tobassco would make someone say "woo doggies!". Anyway, we loved it! Even my health-food averted husband said it was great.

Eclair Cake

Love it! This is going to be my next birthday cake even if I have to make it myself! I have made it using French vanilla pudding and regular vanilla and prefer the flavor of the French vanilla. I also made my own chocolate buttercream because I think most prepared chocolate frostings are gross. I let the cake sit in the refrigerator for 24 hours before serving to allow the graham crackers to soften. I have found that if I serve it too soon the graham crackers will still be crunchy and eclairs should not crunch. Thanks for the recipe!

Taco Seasoning I

This is a great recipe and will replace prepackaged taco seasoning in my pantry. It can be tailored to suit your family's taste. I usually double the garlic and onion powder and sometimes omit the red pepper flakes for the kidos or add a little cayenne if I'm in the mood for a little spice. You can't go wrong with this one!

Classic Meatloaf

I really wanted to like this recipe because I love Chef John's Green Bean Casserole and Pot Roast but it may be the most disappointing meatloaf I've ever eaten. Here is my list of complaints: #1. the flavor of the vegetables is unappealingly prominent, probably would be better to saute the vegetable first to mellow the flavors before processing #2. the flavor of the dried thyme in the Italian seasoning does not go well with the meatloaf, #3. 2 T. of dijon mustard in the glaze was overpowering, using 1-2 t. would have been better or substituting regular mustard instead of dijon and #4. the cooking time was way off. When I checked the internal temperature after 45 minutes, it registered at 116 degrees. After I turned the oven up to 350 degrees it still took another 35-40 minutes to reach 160 and by then the mashed potatoes and steamed broccoli were cold. The end result was a dry, dense unappetizing meatloaf. Sorry, but this did not work out for us.

Grandmother's Buttermilk Cornbread

We loved this recipe! My husband likes Jiffy corn muffin mix and he said these were better. Since I don't have an 8x8 pan I made these into muffins. The recipe yielded an even dozen. I baked them at 375 for 20-25 minutes and they were perfect. I have also baked these in a 9 inch round pan using the cooking directions in the recipe and they came out golden brown and cooked through. Prominent corn flavor with an even coarse crumb...a perfect compliment to turkey chili or on it's own with butter. Yum!

Quinoa and Black Beans

This recipe was sooo good! I was hesitant to try it fearing my expensive quinoa would end up as chicken feed but it was great. The only change I had to make was substituting canned corn for frozen and I found that I really liked the tender sweetness of the canned corn. Cilantro is a strong flavored herb that people either love or hate so add with caution. That being said, since it also turns brown quickly, instead of adding it to the dish I just spinkled it on individual servings to taste so that leftovers wouldn't have slimy brown leaves the next day. I will definately make this again!

Spinach Brownies

This was not a hit in our house. I followed the recipe exactly and my husband and son thought they were terrible. I thought they were marginally better but found them to be greasy and bland. I would try it again with half the butter called for and I would saute the onion with some garlic for more flavor before adding to the mixture.

Thick Cut-Outs

These are amazing! My husband loves sugar cookies and I have tried several recipes over the years but I have finally found a winner. Like many of the reviewers suggested, I added 1 T. vanilla extract and found that amount to be perfect. I also baked on parchment paper rather than greased cookie sheets and had no problems with sticking. The orginal recipe made too much for my small family so I found that scaling the servings to 38 made about 12 large thick cookies and the ingredient measurements were managable.
