Traditional Gyro Meat

Fresh is best! For those who thought this recipe was bland, use fresh ingredients and use garlic, salt and pepper to taste and you wont be disappointed. I recommend using Greek yogurt topping with tomatoes and pitas as well! The only thing I changed about this recipe is that I formed my loaf into 2 smaller loafs that were formed around skewers and cooked over a pan to catch the grease on the grill, (traditional Greek-style) turned out awesome!

Simple Whole Wheat Bread

I had a little trouble with my yeast rising, I substituted 2 cups biga in for 2cups flour and the 2 packages of yeast and 2 cups water. Tastes delicious!

Biga

I would like to point out, that biga means starter and there are quite a few recipes on this site that use starters. I had some really good success with my biga, but I was curious the consistency I should be looking for, mine is really thick batter, should I add more water or wait it out?
