Coffee Chip Cookies

I didn't taste any coffee. They were just like regular chocolate chip cookies. I followed the recipe exactly, but I ended up with four dozens. They were really soft even though I used 1C white sugar & 1C brown sugar. Next time, I'm going to double the coffee and skip baking soda.

Best of the Best Blueberry Muffins

Very yummy & easy to make! I made a few changes due to practical reasons. I skipped salt because I was using semi-salted butter. I didn't have buttermilk, so I used one small peach yogurt, which was a little less than 1/2 cup, so I added milk to make it 1/2 cup. I didn't dust blueberries with flour because they were really well strained and almost dry, and they stayed well suspended. I had some leftover cream cheese, so instead of sprinkling with sugar, I mixed the cream cheese with white sugar & milk into yogurt consistency and put a spoonful on each. The batter was really thick, so I was worried it might not turn out well, but they came out with perfectly round tops and didn't even crack much. The cream cheese topping made for a very moist and slightly sweeter top.

Coffee Shortbread

I wasn't sure how I'd feel about these cookies since I don't drink coffee, but I'm glad I made these. The coffee granules hadn't melted in the dough when I put them in the oven, so I was worried that I might end up tasting the individual granules, but I didn't. The coffee flavor, despite being very strong, somehow blended very well into the rest of the flavor and didn't end up being overwhelming or unpleasant at all. I like my cookies on the crispier side, so I put them on the top rack and baked for a few extra minutes and they came out just perfect! I just rolled the dough into little balls and punched them flat, and they turned out fine. I put chocolate on only half of them, and most everyone preferred the ones without chocolate. HUGE hit with coffee lovers & non-coffee lovers alike.

Berry Shortbread Dreams

I LOVE these cookies and so do my roommate and her classmates. I followed the recipe exactly minus the glaze the first time. I also use homemade jams which had much less sugar than the store bought kinds. They were good, but a bit too rich. So, the second time, I was slightly more generous with sugar and put in a little more jam and they came out perfect- just the right amount of buttery sweet taste mixed in with the tartness of jams (goes really well with pineapple & kiwi jams) I also used vanilla extract instead of almond as I'm not much of a fan for almond extract. I put the dough in the fridge for 30-40 minutes and didn't have any problem handling it. For some reason, I always end up with way more than 21 cookies though, which is great!
