Oatmeal Peanut Butter Cookies

I just finished making these cookies with my 9 yr old and the results are FABULOUS! We made a few modification to suit our tastes: Used all butter in place of shortening & margarine, and whole wheat flour. Also added an extra 1/2 cup of natural peanut butter. If you like your cookies soft and chewy, be sure to take them out at the 10 min. mark. They'll still look doughy at first, but firm up when cooled. YUM, YUM!

Ground Turkey Casserole

I tried this recipe tonight, with a few changes, and it was very tasty. Instead of ground turkey I used sweet turkey sausage. I used my own homemade tomato sauce, which contains lots of fresh garlic, onions and herbs (only because I have a freezer full of it) and I used 1/2 cheddar and 1/2 mozzarella. The result was great! This will become a regular in our house.

Seven Layer Taco Dip

I followed the recipe as is and this dip was great! I was a little nervous about adding the green pepper, but I'm glad I decided not to skip it. It added a nice flavor and texture to the dip. I had about 20 friends over the other night and they devoured every bit of it. The dip was so good, everyone came back for seconds and thirds! This is now my new favorite recipe for get-togethers. (Oh...I did make one change...I used green leaf lettuce instead of iceberg, just because it looks and tastes better.)

Blackberry and Blueberry Pie

Doesn't get much easier than this, when you use a pre-made pie crust (I used Pillsbury). I brought this pie to a dinner party last night and everyone went nuts over it! One of the guests even skipped dinner, waiting in anticipation for the pie. Everyone remarked that the sweetness of it was just perfect! I would recommend adding cornstarch, however. Without it the juices run all over the place. But it still tastes great!

Spinach and Strawberry Salad

Wow! I made this salad for company and it was FANTABULOUS! All three of my kids (ages 3,5 and 8) even loved it! I used baby spinach, added red onion, and used slivered almonds and sunflower seeds instead of poppy and sesame. Also used red wine vinegar with garlic instead of white. I have been craving more ever since making it the other night, and I usually don't even like salad!

Smushed Apples and Sweet Potatoes

We absolutely love these! I use a little vanilla and nutmeg in place of the allspice, and I throw in an extra apple...so YUMMY! This dish also freezes well. I usually double the recipe and freeze the leftovers for another time. The extras are nice to have on hand for a quick meal.

Chicken and Dumplings III

This dish brought back childhood memories of my mom's chicken and dumplings. It really is a great comfort food! I cut the chicken into large bite sized chunks and added sliced carrots and fresh garlic. In place of celery seed, I used Mrs. Dash garlic and herb seasoning. Next time, I'll probably try adding fresh parsley to the dumplings as suggested by others. This one's a keeper.

Egg and Sausage Casserole

My whole family, including three kids, loved this dish! I used sage sausage and added a few spices...salt, pepper & Penzey's Foxpoint seasoning (which includes shallots, chives, garlic & onion). The only problem I ran into was getting the eggs to set. I ended up baking it for over an hour. I'll probably try to use a pan that is more shallow next time. But there will definately be a next time!

Creamy Chicken on Linguine

This recipe is really good as is. But I think it could even be better with a few additions. It almost tastes like something is missing. I think next time I'll try adding some broccoli and mushrooms or I might try adding some cajun seasoning to the chicken and toss in some fresh, chopped tomatoes. Overall, this is a very good basic recipe. Very easy too!

Garlic Potatoes Gratin

These potatoes were awesome! My six year old thinks this recipe should get "six hundred stars" (and she doesn't usually care for potatoes at all). The recipe doesn't need any altering. I did, however, use half & half instead of heavy cream and they came out just fine.

Cheese and Bacon Potato Rounds

These were very good. Try adding some seasoning to the butter...we used seasoned salt, pepper and onion powder. When finished baking, we topped the potatoes with small dollups of sour cream. They were sooo good and cute too:) Nice for serving at a casual get together.

Cheryl's Spinach Cheesy Pasta Casserole

This one surprised me. I thought the recipe looked kind of boring, but after reading the reviews decided to give it a try. I added onion, garlic, basil, oregano & parsley to the sauce and it was really good! This is a great, middle of the week, easy meal.

Chicken Noodle Casserole I

My husband and I thouht this recipe was pretty good, however, my kids didn't care for it much. I tossed a couple of chicken boullion cubes into the cooking water, as well as a little onion powder, garlic salt and dried parsley. To cut back, I used reduced fat soups and sour cream and no yolk egg noodles. I thinned the sauce a bit with a little skim milk and omitted the salt since I cooked the chicken and noodles with the boullion cubes. Finally, I added baby peas to the mixture. Topped with a layer of cheddar cheese and then a layer of Ritz cracker crumbs (doubled the amount). Not bad.

Tasty Collard Greens

This is very similiar to the way I've always made collard greens. I usually use fresh garlic, but I took a shortcut the other night and used canned roasted garlic chicken stock and surprisingly the greens turned out even better! Used a splash of cayenne pepper instead of the red chile flakes and served with hot sauce. Very good! (Forgot to mention I added an onion to the chicken stock as well)

Applesauce

YUMMY! This was a big hit with my whole family. My kids are fighting right now over who gets to eat the last bit of applesauce. I drained the water once the apples were tender. Didn't need to put them in the blender, just stirred with a whisk and the consistency came out perfect. I added about 3 Tbs. brown sugar, 1 tsp. vanilla, a pinch of cinnamon and a dash of nutmeg. Delicious!!!!

Garlic Green Beans

Very good! I also recommend using fresh green beans...they taste sooo much better than canned. I only used about 1 Tbs. olive oil and in addition to salt and pepper, I added a little onion powder. The result was very tasty. My three year old even said "Heeeey, why do you get more green beans than me?"

Four Cheese Macaroni

I've tried many macaroni and cheese recipes and this is one of the best so far. However, I did make a few alterations...I only used 4oz. of processed cheese and added a little extra sharp cheddar to the other cheeses for a little kick. I also added a bit more salt than the recipe called for. It turned out yummy!

Squash and Apple Bake

I always, always get rave reviews when I make this dish for company. My family loves it too, including my picky kids! Instead of mace, I add 1 tsp. vanilla, 1 tsp. cinnamon and a dash of nutmeg and I never use anything but Granny Smith apples. This one is definately a keeper!
