Chicken Enchiladas V

Just awesome! I made it for the first time when company was coming over. They wouldn't stop talking about how good it was. I've made it again many times since. I serve it with a recipe for dirty rice that I found on this site. What a great meal, Barb in BC Canada

Rhubarb Meringue Squares

Over all this was not a bad recipe. The rhubarb set well and the meringue actually went well with the coconut. I didn't like the crust it was too soft even with an extra 5 minutes of baking. I will try this again but next time I will make a crisper, more shortbread like crust.

Buttermilk Pancakes II

This is the best pancake recipe ever! Turns out everytime. One time I didn't have buttermilk so I used the whole milk that I had on hand and replaced 1/8th of the milk with lemon juice. Worked out just as well! These pancakes MAKE our Sunday breakfasts! Barb in Vancouver BC

Honey Baked Chicken II

This was just wonderful! The flavor was so nice. For those afraid of the curry, don't worry, it adds an interesting yet very mild flavor. It wouldn't be the same without it. instead of basting the chicken I turned it over as suggested by other reviewers. Turns out well every time, a keeper for sure!

Captain Crunch Chicken

I should have trusted my instincts on this one! Simply not a good coating for chicken. It really had no flavor except for too sweet. Sorry but not a keeper for this family. Barb Sepke, Vancouver BC.

Sarge's EZ Pulled Pork BBQ

This was sooooo good! The coffee made me wonder but you'd never know that it was there. Before I put the pork in the crock pot I browned the roast on all sides. Turned out beautifuly. My husband will be buying pork roasts all of the time just for this meal. Kids loved it too, a new family favorite! Thanks Sarge! Barb in BC, Canada

German Pancakes II

I'd give this ten stars if it was possible. I am the worst pancake maker. I usually burn them, or the other extreme, are under cooked. These are so easy! No flipping, no guessing if they are done, no smoking up your kitchen. Just pour the batter in the pan and 40 minutes later, the most wonderful pancake that that tastes somewhat like a french toast without the bread. Enough to feed my husband, myself and my 2 kids (4 and 3) A definate keeper! Thanks Barb in BC canada

Aunt Bert's White Cake

This tasted ok but was so dry, even when fresh out of the oven. The next day I threw the rest away it had the consistancy of tough dry cornbread. Sorry, not a keeper for this cake baker!

One Minute Chocolate Icing

Chocolate Pound Cake III

This chocolate pound cake is just the best! And very forgiving. I did not have butter or buttermilk so I used margerine and a cup of regular milk with a teaspoon if vinegar added to it. It turned out so well, not dry at all like regular pound cakes usually are. Just fantastic, I will make this again and again. Thanks, Barb in BC Canada

Mango Cake

This wasn't what I expected, but a good recipe none the less. Very moist and just enough sweetness that you don't need to frost it. A very good cake to have with a nice cup-a-joe! I will make this one again. Thanks from Barb in British Columbia, Canada

Chicken Breasts with Balsamic Vinegar and Garlic

This recipe is just wonderful! My husband and children found it had a bit too much vinegar even when I cut the amount in half. So the next time I made it I added about 2tbsp of cream when the sauce was cooked. It might sound strange but it really helped richen the flavor and take the bite out of the vinegar. This recipe also works well with pounded, boneless, skinless chicken thighs. Thanks for this recipe, it's a family favorite! :) Barb in BC

Quick and Easy Yorkshire Pudding

This was the first time I made yorkshire pudding. I was always afraid to atempt it because my friend said that it was so hard and a pain to make. This was wonderful and so easy. I did make a change though, I wanted to use beef drippings and didnt have any. So I first melted 4Tbsp shortening and 1tsp of beef soup base (powder) in the microwave. Then I put that mixture in the muffin tins instead of margerine. It gave them the wonderful flavor of using traditional beef drippings! Thanks for the reciepe. My family loved them.

Chocolate Chip Cheesecake

This cheesecake kicks butt! My family loved it. It was so easy to make and turned out so well. I used milk chocolate chips instead of semi sweet. There was only one peice left the next day and it was even better after sitting in the fridge overnight. I am making this again for sure. Thanks, Barb in BC Canada

Pear Pie I

Baked Mushroom Thighs

This recipe was wonderful, I made a few changes. Instead of bread crumbs I crushed a package of preimum plus crackers. I also used boneless, skinless chicken thighs. The result was the yummiest chicken cutlets I ever had. The family loved them. I will be making this one again! Barb Sepke
