Guacamole

MMMMMMMMMMMM delicious! great as a side with homemade enchiladas. I love guacamole and this satisfies my craving for avocados like none other!! Used the juice of 2 limes and a tad bit more of cayenne.. definitely a fave recipe!

One of my favorite recipes when i'm tight on time. I used canned chicken breast and overdosed on the currypowder... i like it spicy haha. SOOOOO GOOODD.

Ultimate Twice Baked Potatoes

OH MY GOSHHH! Honestly, a really great recipe. Just made it for my boyfriend and I. I served it with ribeye steaks and ceasar salad. As a college student, I enjoy thinking outside of the box and refraining from eating ramen every night or going to chipotle so this was a great change. I tweaked the recipe just a little but no major changes. I halved the recipe because there was only two of us and it was more than enough. I rubbed the potatoes with olive oil and salt and then microwaved them for three minutes to cut on time. It only took thirty minutes in the oven. I cut back on the sour cream and the green onions and mixed some of the bacon in before rebaking. Turned out AMAZING. My boyfriend is a really picky eater and he loved it. His exact words "I guess I like potatoes now?" But then again when steak is the main dish he thinks everything else on the table is gold.

Quick and Easy Chicken

Made some minor changes to the recipe. I dont use that much oil for one. I added a table spoon of korean pepper paste (guchujang). I think I added a little bit more lemon juice until I got a sweet and sour kind of taste. It turned out great. My boyfriend loves this chicken. I've made this recipe twice...in one week :]

Ashley's Chicken Katsu with Tonkatsu Sauce

Pretty decent recipe. My boyfriend is korean and he loved it. The sauce is a little off so I made some changes. I'm a college student so it's difficult to cook on a regular basis. This recipe was easy and quick to do. The sauce was too tangy and needed some sweetness. I didn't have sugar on hand so I used maple syrup. I cut back on the w sauce and it turned out just fine.
