Layered Enchilada Bake

This dish is like - if lasagna and chili each went to Mexico for spring break and hooked up....it was really delicious! I changed a few things though: I used 1 cup of salsa and the other cup was a mixture of chili sauce (1/2 cup) ketchup (1/4 cup) and water (1/3 cup). I used the water because I used my own recipe for taco seasoning which contains flour, so the mixture was a bit thick for us. The end result was absolutely delicious - even the kids ate it! We will make it again for sure.

Spanish Rice Bake

This was alright - it wasn't super flavorful, but it was quick, easy and satisfying. I used red pepper in place of green, double the cheese that the recipe called for and no cilantro because we don't care for it. It was much better the second day.

Shredded Beef Chimichangas

Absolutely The Best Shrimp Scampi

Oh my. I made this for dinner tonight and it was really, really, good! I made a few modifications though: I omitted the cayenne and salt to the flour and replaced it with Old Bay seasoning. I used 1 lb of shrimp, but kept all other ingredient amounts the same. I used 1/2 olive oil and 1/2 butter; I used fresh oregano, 1/4 cup white wine, no brandy and about 2 Tbsp of lemon juice. During the wine/brandy step, I added the fresh herbs in at the last minute and then poured everything over the shrimp. The last thing I did was to sprinkle crumbled feta cheese over the entire dish before broiling. The end result was out of this world good!

Sarah's Rice Pilaf

I made this tonight alongside some grilled lambchops and it was ok. The orzo had a strange, almost slimy consistency to it, but the flavor was fine, although nothing special. It's a nice change from ordinary rice.

Sex on the Beach III

OMG this was so good! I scaled the recipe and made it for a party we were having last night. I made a big pitcher of it and then for each glass, I poured it into a martini shaker over ice so the drink was nice and cold when serving. Just delicious, wouldn't change a thing.

Mama's Asian Chicken and Rice

This was really good - I only made one minor modification to the recipe, and that was to add cayenne instead of the red pepper flakes. Next time I make this, I will not use the cornstarch/water mixture because after reducing, the sauce is thick enough without having to thicken it further.

Grilled Salmon With Orange Glaze

I made this salmon for dinner tonight and the end result was pretty good. I made the recipe as it was written and we found the glaze to have a very light flavor. A quick, easy way to use salmon, we liked it.

Heavenly Halibut

I scaled this recipe to 4 servings and cut the recipe in half. The only change I made was to use haddock in place of the halibut. The end result was just ok....nothing in the least bit special, so I likely will not make it again.

Mediterranean Stuffed Chicken

This was really good chicken, but I did change they cheesy filling substantially. I reduced both cheese (cream cheese to about 2 ounces and feta to about 1/4 cup) and I added in: garlic clove, fresh baby spinach, fire roasted red peppers. I blitzed this all together in my mini-food processer, stuffed the chicken and baked. The end result was very yummy - I will make again for sure.

Dijon Crusted Halibut

I made this for dinner tonight and we really enjoyed it! I did put my own spin on it - I used light Miracle Whip in place of the mayo, I used less mustard (about 1 tsp) and less horseradish (a generous tsp). Lastly, I used panko instead of breadcrumbs. We loved it, it was very tasty - but next time I will reduce the butter - 2 Tbsp is a bit much in my opinion.

Spaghetti Squash Saute

We loved this! For the most part I followed the recipe, with a few minor exceptions. I cut the recipe in half as it was only 2 adults and 2 small children eating - I reduced the amount of butter in half and used 1/2 olive oil. I also added a small grating of nutmeg to the end result was really brought the flavors out. The end result was very good and I wouldn't hesitate to make it again!

Trishie's Chinese-Style Salad Dressing

This was delicious!! I did scale the recipe to 1 serving and added a bit more hoisin and honey. Following the suggestion of another reviewer, I used rice wine vinegar instead of red wine vinegar, I cut down on the olive oil slightly and to finish, I added about 1/2 tsp of sesame oil and about 1 tsp of soy sauce. The end result was absolutely delish!!

American Frittata

I made this frittata for Valentine's day morning breakfast for my family - everyone liked it, even my picky kids! I substituted bacon for the ham because that's what I have on hand. The only reason I didn't give this recipe 5 stars is because we felt there was too much potato - I used on med-large and one small, and I think one large would be good.

Captain's Crunch French Toast

This was really good French toast - but the recipe ingredients are off a bit in my opinion. I had a lot of egg batter left over - so I would probably reduce the ingredients if I were to make this again. I did use just regular whole wheat bread - so maybe that effected how much egg batter was used. I also needed a lot more Cap'n Crunch cereal than the recipe called for, probably about triple (1 1/2 cups). The end result was really good - my kids loved it!

Phyllo-Wrapped Halibut Fillets with Lemon Scallion Sauce

This was ok - the recipe sounded better than it was. I followed the recipe exactly and while presentation was nice, the lemon sauce was very thin and VERY lemon-y for our taste. I'm glad I tried it, but I probably won't make it again.

Turkey Brine

Excellent recipe for brining turkey (or chicken for that matter). I used 4 cups of chicken broth and topped up with water in place of the vegetable broth - but left all the other ingredients the same. The end result was deliciously moist Christmas turkey which I grilled on the BBQ. Thanks for a great recipe!

Aunt Millie's Broccoli Casserole

This was very, very good - although I did alter the recipe based on other reviews. I used cream of celery instead of mushroom, I used about 1 cup of white cheddar in place of the American cheese and I used crushed Ritz crackers mixed with melted butter for the topping. The end result was delicous and my 4 year old ate it - which is a very good sign. We will make this again for sure - thanks for a great recipe!

Homestyle Turkey, the Michigander Way

Wow - I made this turkey for Christmas dinner and it was fantastic - received rave reviews from all! I followed the recipe exactly and not only was the turkey moist and delicous - the gravy was absolutely fantastic. If I'm roasting a turkey, this is the only way I will make it!

Grilled Whole Turkey

This recipe receives 5 stars from me because it is delicious and ridiculosly easy! I did not use the bouillon/spices noted in the recipe, I just put it in a pan and grilled it for Christmas dinner (oven space is at a premium on Christmas day!). I did brine the turkey first (which is why i did not use the bouillon/spices) and the end result was a bird that cooked in just over 2 hours (11.5 lb turkey) and was very delicious - I received rave reviews from all!
