Sky High Yorkshire Pudding

Absolutely delicious! These were my first attempt at making Yorkshire pudding and everyone enjoyed the end result served alongside prime rib of beef. I used about 1 1/4 tsp of the pan drippings from the roast in the bottom of the muffin tins, and I would reduce this amount next time by probably 1/2 tsp. I did add about 1 tsp of salt to the batter and in my opinion, it needed more (this is also why I only gave the recipe 4 stars). The only other point worth mentioning is that my puddings baked in about 20 minutes.

Shrimpcargot

I made these for company and instead of using 1 large shrimp, I used about 3 small salad shrimp per mushroom. The end result was ok - but we found them a bit bland; the flavor of the mushroom overpowered both the garlic butter and the shrimp.

Butternut Squash and Apple Soup

This was delicious - but I replaced the squash with sweet potato because that's what I had (the squash had gone bad). The end result was a deliciously sweet soup that was a hit with our dinner guests. I finished the soup at the end with about 2 Tbsp of butter and topped with a cinnamon creme.

Winter Vegetable Cheese Gratin

This was really good and was enjoyed by our guests. I didn't add the potatoes and simply served as a vegetable side dish - and I omitted the thyme and parsley. I also forgot the bay leave and topped with a cheese blend which unfortunately lacked flavour. The end result was good, but I had to cook it for about 1 hour and 45 minutes to get the carrots to cook - which resulted in limp cauliflower. Next time I will either cut the carrots into smaller pieces or replace for a different vegetable (eg. red peppers).

Five Spice Turkey Cheeseburgers

These were absolutely delicious!!! I omitted the ground ginger and must used more fresh and I forgot to put the fresh spinach leaves on it - but the end result was incredible served with garlic mayo. I should note that I used ground chicken instead of ground turkey - we will definitely make these again! EDIT - I made these again and used ground turkey - the end result was still very good. This is easily my favorite turkey burger recipe!

Holiday Chicken Salad

I made this today for my family for lunch. The only changes i made were to sub in low-fat sour cream for half the mayonnaise, I used red pepper instead of green and I sub'd in walnuts for the pecans because that's what I had. The end result was absolutely delicious!!! I will definitely make this again!

Roast Pork with Maple and Mustard Glaze

We made this pork for dinner last night - and the end result was nice...but the sauce is quite thin and can burn quite easily. We brined the pork before cooking and the end result was moist, flavorful pork.

Chinese Chicken Salad III

I made this salad for dinner the other night and served it alongside some cornbread. The end result was really delicious and quite filling! I grilled the chicken and didn't add any cilantro to the salad - we will definitely make this again. The dressing really makes this salad - but as other reviewers have mentioned, it does need oil to thin it out so I added about 1/4 cup of EVOO.

Holly's Chicken Cordon Bleu Casserole

I made this for dinner last night - and the end result was just okay. I added sauteed onion and garlic in with the chicken mixture, I cut the recipe in half and reduced the amount of cheese (to 2 cups), chicken (to 3 boneless, skinless chicken breasts) and breadcrumbs (to 1.5 cups). I found the dish to be good, but not great - just not worth the fat and calories IMHO.

Basil Tomato Soup

We made this to go with some tomato/mozzarella panini and we found the end result to be good - but very rich. I would suggest replacing some of the cream with milk. I followed the lead of some other reviewers by sauteeing onion with garlic before adding the tomato puree.

Pork Tenderloin with Creamy Herb Sauce

Maybe I shouldn't be reviewing this recipe, because I did change the recipe quite a bit. I doubled the sauce, added onions and garlic and used 2 lbs of pork tenderloin. I used milk in place of the cream and used fresh herbs (right at the end) in place of the dried. I also forgot to add the beef bouillon. The end result was ok - my hubs liked it better than I did. I just found that there was not a lot of big flavor and the sauce kind of separated during the final 20 minute cooking time.

Czech Roast Pork

This was delicious! I had about a 2 1/2 lb roast, so I cut the 'rub' ingredients in half. I cooked this roast at 325 for about 3 1/2 - 4 hours, I added more beer about halfway through as the first bit that I put in had cooked off. In the end, after removing the pork, I added 1/4 cup of white wine along with nearly 1 cup of water to the onions and little bit of liquid in the pan. when it was boiling, I made a 'beurre meunier" with the cornstarch/butter and stirred that into the sauce. The end result was really flavorful, delicious, fall off the bone pork that even my kids liked.

Baklava

So good! I made a rookie mistake when grinding the nuts though - I put whole almonds, pistachios and pecans into the food processor along with walnut "crumbs" (small pieces) and started to pulse away - well because the walnuts were so much smaller than everything else, if I had kept going, I would have ended up with walnut powder. So in the end, my nuts were not as finely chopped as I would have liked. For the layering, I did 10 sheets of phyllo then 1/3 of the nuts, 6 sheets, another 1/3rd nuts, 6 sheets, last 1/3rd and then topped with 9 sheets of phyllo. The nut mixture was good, but I felt there was too much cinnamon, so I will reduce next time (I also added 1/4 cup sugar and 1/2 tsp allspice to nuts). For the sauce, I made 1 1/2 times the amount and added about a 2" strip of orange rind. I think it might be too much sauce, but the jury is still out on that. The only other thing I will change next time is to press down on everything before baking as my top layer of phyllo didn't seem to stick to the last layer of nuts. Once the baklava was out of the oven, I poured the cooled sauce over everything and topped each piece with a pinch of finely ground pistachios for that 'authentic' look. The end result was fantastic - we can't stop eating them!

Twice-Baked Mashed Potatoes

I made this tonight along side a roast pork and the end result was good - but not outstanding. I didn't use green pepper because we don't like them - but I followed the directions for everything else. The end result was creamy and good - but it was missing something - just not sure what.
