Baklava

So good! I made a rookie mistake when grinding the nuts though - I put whole almonds, pistachios and pecans into the food processor along with walnut "crumbs" (small pieces) and started to pulse away - well because the walnuts were so much smaller than everything else, if I had kept going, I would have ended up with walnut powder. So in the end, my nuts were not as finely chopped as I would have liked. For the layering, I did 10 sheets of phyllo then 1/3 of the nuts, 6 sheets, another 1/3rd nuts, 6 sheets, last 1/3rd and then topped with 9 sheets of phyllo. The nut mixture was good, but I felt there was too much cinnamon, so I will reduce next time (I also added 1/4 cup sugar and 1/2 tsp allspice to nuts). For the sauce, I made 1 1/2 times the amount and added about a 2" strip of orange rind. I think it might be too much sauce, but the jury is still out on that. The only other thing I will change next time is to press down on everything before baking as my top layer of phyllo didn't seem to stick to the last layer of nuts. Once the baklava was out of the oven, I poured the cooled sauce over everything and topped each piece with a pinch of finely ground pistachios for that 'authentic' look. The end result was fantastic - we can't stop eating them!

Twice-Baked Mashed Potatoes

I made this tonight along side a roast pork and the end result was good - but not outstanding. I didn't use green pepper because we don't like them - but I followed the directions for everything else. The end result was creamy and good - but it was missing something - just not sure what.

Honey Cornbread

Honey Butter

This is excellent honey butter, but very sweet. I was serving it with cornbread, which is already on the sweet side, so if I were making this for anything other than breakfast - I would probably reduce the honey to 1/4 cup. I used my Kitchenaid mixer and whipped this up in under 5 minutes. The end result was delicious!

Asian Salmon

I also halved the amount of salmon in this recipe, but kept the sauce amount the same. I followed the advice of other reviewers and broiled the fish for the last few minutes. The end result was quite good - my husband liked it better than I did though. The rice was nothing fantastic - although we may need to replace our dill.

Easy Morning Glory Muffins

These muffins are SOOOO good! My husband loves them, I love them and most importantly my 4 and 2 year old children love them. I also replaced half the oil with a 1/2 cup of peach applesauce - the end result was moist, delicious muffins. If I were to change anything in the next batch, it would be to add more grated apple and a few more raisins.

Cheesy Ranch Potato Bake

I made this recipe last night for dinner and it was really good! I scaled the recipe to 4 services and from there followed the recipe exactly with three exceptions. I used seasoned salt, I dotted the top of the potatoes with only about 1 Tbsp of butter (which could easily be omitted in my opinion) and I used slightly more cheese than the recipe called for. I also took the foil off after mixing in the cheese and dressing and baked for about 20 more minutes. The end result was really good - even the kids ate it!

Amber's Sesame Chicken

I made this for dinner the other night and it was really delicious. I omitted the red pepper flakes because my kids don't like spicy things and I used red pepper instead of green. I forgot to add the sesame seeds to the flour mixture and didn't really miss them. The only other changes I made was to double the sauce ingredients and add 4 or 5 cloves of garlic to the onions and peppers. The end result was enjoyed by all.

Spinach, Egg, and Pancetta with Linguine

I made this pasta last night and the end result was underwhelming. I added two medium sized slices shallots and 5 cloves of garlic which I sauteed after the pancetta was cooked; I also used more pancetta than the recipe called for. The end result just didn't really mesh for us - we won't make this again.

Baked Haddock

I made this fish the other night for dinner and it was really good! I used panko instead of breadcrumbs, herbes de provence instead of thyme and I increased the bread/cheese mixture to accomodate my 1.5 lbs of haddock. I followed the advice of another reviewer and baked this on a rack so it didn't have a soggy bottom - and the end result was delicious fish served with a lemon wedge.

Marinated Pork Tenderloin

I made this recipe last night and served it along with 'Grilled Pineapple Mango Salsa" from this site. I doubled the marinade recipe, used fresh garlic (2 big cloves) and 1 large shallot in place of the dried onion and I only used 1 tsp of cinnamon. The end result was really delicious - we will make this pork again because it was delicious even without the salsa.

Grilled Pineapple Mango Salsa

I made this salsa to go along side "Marinated Pork Tenderloin" also from this site. I cut the recipe in half and from there the only change I made was to add the zest of 1/2 lime and the juice from the whole lime - I also added salt. The end result was delicious and went with the pork very well.

Lebanese Chicken and Potatoes

I made this for dinner tonight and we thought it was just ok. It was definitely lacking in flavor - even though I heavily seasoned the chicken breasts with salt, pepper and allspice. The end result wasn't terrible, but it just wasn't very flavorful.

Honey-Garlic Glazed Meatballs

I made these meatballs tonight - but used some fresh meatballs made by my local grocery store. I did increase the garlic in the sauce to about 3 REALLY big cloves (or 5 regular ones). After I baked the meatballs, I added them to the sauce and cooked for about 15 minutes or so - the end result was really good - even my picky kids enjoyed them (and that's saying something!)

Pretty Chicken Marinade

I followed the recipe exactly - with the exception of the cut of chicken i used. I used bone in (skin on) chicken breasts and although I marinated the chicken for about 10 hours, the flavor of the marinade didn't really permeate the meat. I will probably make this again, but next time I will use boneless/skinless chicken breasts which I've either butterflied or flattened.

Onion-Roasted Potatoes

These were SO good! I made them alongside BBQ chicken for dinner last night and they were excellent! I used about 1.5 lbs of potatoes, a couple TBSP of canola oil and a package of onion soup mix. I grilled them on the BBQ in a foil packet for about 35 minutes; the end result was very good!

Chicken Milano

When I added the chicken broth I then reduced it by half. When reduced, I stirred in about 2 Tbsp of basil pesto, 1/2 grated Parmesan cheese and the cream. I added the chicken back in and heated through and tossed with bowtie pasta. Everyone enjoyed it (even my picky 2 and 4 year old)!
