Lunch-Box "Handwiches"

I made these for my husband's lunch using leftover Easter ham. The end result was pretty tasty, but a little on the bland side. I used ham and swiss and some with ham and cheddar...but they were missing something, I just don't know what. It's important to note that I also used the Honey Whole Wheat dinner rolls recipe off this site and it worked beautifully. Next time I makde these, I am going to put pizza filling inside - that would be delicious.

Crunchy Turkey Salad

This was so delicous! I used some leftover turkey breast and followed the recipe *almost* exactly. I reduced the celery to 1 large stalk and reduced the apple to 1 large MacIntosh (peeled). I also omitted the sour cream because I didn't have any and just used Olive Oil Hellmans. The end result was absolutely delicous - to the point that my husband who proclaims to hate turkey salad rated it 5 stars. The next time I make this, I will toast the walnuts for added flavour and I might add some dried cranberries which would be delicious as well. EDIT: I made this again using chicken and it was just as good!

Easy Mini Quiches

These are not quiche, in my opinion. I found them dry and the only real flavour was of the bacon and onions. I used green onions because the flavour was milder and I made these primarily for my children to eat. A point worth noting is that I do make my own baking mix using: 1 cup of flour, 1 1/2 tsp of baking powder, 1/2 tsp salt and 1 Tbsp of shortening. I use a fork (or pastry blender) to mix and these works out very nicely as a homemade baking mix. So all in all, we prefer a more 'eggy' quiche, so we probably won't be making these again.

Gulliver's Cream Corn

Meh...this was ok. I still prefer the canned stuff. The only change I made was to use 10% cream because that's what I had and I used my immersion blender to give it a buzz and break down some of the corn kernals. In the end, the corn was ok - but very sweet. I would suggest leaving out the sugar...or at least reducing it by half.

Chocolate Cobbler

I made this for my family last night and the end result was pretty good. The recipe definitely gets points for being quick and easy...but we found it VERY sweet, even though I reduced the amount of sugar in the batter. If we're craving something super sweet, I will make this again.

Ignacio's Super Peanut Butter and Jelly Sandwich

I made this for my lunch the other day and it was pretty good...if you're really hungry. This is a pretty big sandwich and I do recommend using a lot more pb and jelly than you would normally use. The addition of a piece of toasted bread gives a really good texture and crunch.

Pleasant Pork Chops

I made these for my husband and I for dinner the other night and they were just ok. The flavor of sour cream was very strong (I would recommend cutting down on this ingredient). I found that porkchops cooked in golden mushroom soup have more flavor and are less of a pain (not that these are a pain to make, but what's easier than dumping a can of soup on some chops?)

Pesto Cream Sauce

This was ok. I scaled the recipe to two servings, but it made more like 5. I followed the recipe exactly with only one minor change, I added about 1.5 Tbsp of flour to the milk to make sure the sauce was thick enough (based on another review that said the sauce was too thin). This wasn't needed, the sauce was plenty thick without the additional flour. So all in all, it was a pretty quick dish to make - but I just found that pesto completely overpowered every other flavor in the dish. It gets points for being quick and easy, but that's about it...we likely won't make it again.

Pan-Fried Asparagus

I made this asparagus for a dinner party we had last night and it was really delicious. I covered the asparagus to help it along, but having a lot of stuff on the go at once caused me to slightly overcook it. In saying that, it was still very, very good and I will make it again for sure. The only point worth mentioning is that the amount of butter/oil called for is not necessary; you can easily reduce the amounts by half.

Family's Creamed Spinach

I used cream of mushroom soup in this recipe and we didn't really care for it. We found the ratio of soup mixure to spinach to be too high; all we could taste was cream of mushroom soup. My hunt for a really great creamed spinach recipe is still on :(

Mary's Roasted Red Pepper Dip

This was delicious!! I made it for a dinner party we hosted last night and it was very well received. I cut the recipe in half and it worked out very well. I took a shortcut and when I was using my food processor to grate the cheese, I also grated the onion so nobody got a chunk of onion in a bite of this relatively smooth dip. Next time I might grind up some of the red pepper in the food processor (as well as adding the diced bits) to give the dip a more saturated red color. In the end, really delicious and quick to throw together.

Garlic-Lemon Double Stuffed Chicken

I scaled the recipe to 2 servings and filled 3 small chicken breasts. I added lemon zest and a small clove of garlic to the cheese mixture and in the end, we thought this recipe was just ok.

Savory Roasted Root Vegetables

Yummy - we loved this! I left out the beet greens because mine were a little on the limp side - and I added about 1 tsp of dried rosemary in place of the thyme (thyme isn't a fave in our house). I didn't find the wine added very much flavor and the chick peas added a great flavor and texture. Thanks for an awesome recipe!

Baked Dijon Salmon

This is literally my favorite way to eat salmon. We've been making this recipe for a couple of years and it's the tastiest fish recipe you'll find. My husband makes this and doesn't change the recipe at all (which is amazing for us!). Love it - thanks for a great recipe.

We thought these were ok - VERY sweet though. I realized at the last minute that I didn't have any walnuts, so I left them out - apart from that, I followed the recipe exactly. In the end, we just found that they were chocolate chip cookies in the form of a bar instead of a cookie.

This was really good! I thought the eggs would skeeve me, but everyone enjoyed it (even our 3-year old!). I did add the raisins while I cooked the oatmeal so they would soften a bit, but apart from that, I kept the recipe the same. This definitely kept us full for a long time and was a really tasty breakfast.

Amazing Italian Lemon Butter Chicken

This was very tasty and definitely company worthy dinner fare. I did all the prep work in the afternoon, so all I had to do was cook everything and this came together in 20 minutes or so. Although I followed the recipe ingredients for the most part, I did reduce the amount of chicken to 2 breasts (1 lb) and I butterflied them (instead of pounding) and then sliced into strips. I also omitted the capers because I couldn't find any in my grocery store. So the first thing I did was render my bacon so it was crispy and removed it from the pan. Then I floured and cooked the chicken and removed that and added the mushrooms and artichoke hearts (would also be very good with hearts of palm). At the end of the cooking time, I added some chopped, fresh Italian parsley. Meanwhile, I prepared the sauce and cooked the pasta; I didn't want to make the sauce too much in advance as I didn't want it to break. Once everything was cooked, I added it all back to the pan along with the pasta, put it in a serving bowl and topped with more parsley. The end result was really delicious - we'll most certainly make it again.

Uncle Bill's Chicken Strips

We made these for a quick dinner the other night and weren't pleased with the end result. The batter lacked flavour entirely and the butter just ended up making things really soggy. They weren't terrible, but bland, soggy chicken strips aren't my idea of good food....sorry.

Waffles I

I got a new waffle maker for Christmas and used this recipe when using it the first time. My waffles were delicious and I whipped this recipe up in no time flat. I did beat my egg whites as suggested by one reviewer and the end result was waffles that were fluffy on the inside and crispy on the outside. For us, this recipe made 5 waffles.
