Peanut Butter Nuggets

I made these little balls this afternoon and we thought they were SO good! I followed the recipe almost exactly, the only change being that I added about 2 Tbsp of unsweetened almond milk to the final result - without it, the cookies were very crumbly. Great little snack, but don't be fooled, they're not super healthy!

Roasted Beets 'n' Sweets

I made this dish for dinner tonight and we just loved it! I reduced the amount if pepper and omitted the onions given that I was serving it to my kids and a few of their friends...the end result was delicious! I slapped on a pair of latex gloves to peel my beets and roasted them for 20 minutes, added the sweet potatoes and cooked for another 35-40 minutes. The end result was great and we will definitely make again.

Chicken and Rice Casserole

This recipe is missing a few key ingredients...I have been making this recipe for years, and my mom before me and her mom before her. With these changes, you will have five star recipe. Along with the mushroom soup (I use Golden Mushroom), you also need 1 can of water and another can of some kind of cream soup (I use cream of celery). Mix the canned soups, water and rice together, pour into the bottom of a casserole dish, add chicken breasts on top (I use bone in breasts to keep them moist long enough for the rice to cook), sprinkle with the dry onion soup mix, cover and bake at 350 for an hour to an hour and 15 minutes. The end result is a "fix it and forget it" meal that my whole family (along with two picky kids) really enjoys.

Triple Dipped Fried Chicken

I made this chicken using bone in, skin on chicken breasts and the end result was ok - but not super. I only soaked my chicken in buttermilk for as long as the recipe called for, so my chicken was a bit drier than I would have liked. I may try this recipe again, being sure to do the buttermilk step for 6-8 hours and I may try boneless skinless breasts.

Fried Rice Restaurant Style

I made this for dinner tonight and we all loved it! I added oil to a pan, added diced onion and 2 cloves of garlic. When fragrant, I scrambled two eggs and then added 1 cup of mixed veggies. When the veggies were heated through, I added the rice and cooked until warm. I added a couple of Tbsp of oyster sauce and the same of soy sauce, finishing with drizzle of sesame oil. The end result was absolutely delicious - better than any Chinese take-out I've had!

Cola Easter Ham

I made this ham for Easter dinner and it was fantastic! I used an 8 lb spiral sliced smoked ham that already had a brown sugar glaze on it (so I skipped the brown sugar step in this recipe). I poured the cola and grape juice around the meat and cooked on low for 4 hours in my slow cooker. The end result was moist, delicious ham that we will make again for sure.

Mahogany Chicken Wings

I made these to take to a get together and they were a hit. I would have preferred for them to be a bit sweeter, but overall the flavor was very good. For presentation, I put them on a platter and sprinkled with green onion which I cut on the bias.

Amish White Bread

I made this bread with my KitchenAid mixer and it was a breeze. After adding the flour, I mixed on speed 2 (using the dough hook) for about 3 minutes and then let it rise, punched it down, divided into two loaves and placed each loaf on a baking sheet which I sprinkled with cornmeal (the cornmeal gives the loaves a nice texture and appearance). The only reason I am giving this bread two stars is because it is VERY sweet as other reviewers noted. I will definitely make this again because the consistency is wonderful, but I will reduce the sugar by half as a starting point.

Ham and Cheese Crescent Roll-Ups

I made these for my kids' school lunch and they really liked them. You can use any type of meat (ham, turkey even bologna!). I used a cheese string cut into thirds and just rolled everything up. My kids loved them warm or cold.

Slow Cooker Beef Stew IV

I cut this recipe in half to make for my family of 4 - although the recipe was scaled to 6 servings, it served a scant 4. Although the end result was fairly tasty, I didn't find all the preamble made much of a difference in the end. Next time, I will simply throw everything in the slow cooker and walk away.

I was disappointed by this recipe. The only change I made to this recipe was to cut the sugar in half across the board and I only used brown sugar. The net result was alright - but nothing to rave over.

Slow Cooker Lemon Garlic Chicken II

I made this for dinner tonight and we thought the flavor was good, but found the chicken breasts to be quite dry - even though we only cooked for 6 hours in the slow cooker. I didn't bother browning anything, I just threw it all in the slow cooker and let it do the work. I increased the garlic to four big cloves, roughly chopped, added a half cup of white wine and cooked on low. The end result was tasty...but dry.

Really delicious, easy side dish. I do this with regular potatoes to rave reviews also. I baked the potatoes at 400 degrees for about 40 minutes and they were perfect.

Apple Harvest Pound Cake with Caramel Glaze

I made this for a dinner party and it was a great dessert - but I found it lacked flavour on the first day. This is definitely a cake that tastes better on the second day. I substituted pecans for the walnuts and although I started applying the glaze when the cake was warm (per the instructions), it simply melted into the cake, so I waited until the cake was cool to apply the rest of the glaze so that it could actually be seen. I served the cake along with some cinnamon whipped cream.

Cinnamon Raisin Bread I

We loved this bread! I omitted the raisins but will definitely add them the next time. This is a really great bread that is not too sweet and has just the right amount of cinnamon and sugar (I used brown sugar for the swirl) that it doesn't feel like you're eating candy for breakfast. This made three big loaves; I baked one right away and froze the other two. When making one of the frozen loaves, I simply take it out of the freezer before bed, put it in a greased loaf pan and place in the oven, covered with the oven light on and let rise overnight. Then in the morning, I bake according to the directions. We find our bread is ready in about 30-35 minutes. Thanks for a great recipe Faye!

Spinach Salad with Peaches and Pecans

Absolutely delicious combination of flavours. I used a blend of romaine and baby romaine along with a maple balsamic dressing. The end result was delicious served with Addictive Sweet Potato Burrito's from this site.

Polenta with Rosemary and Parmesan

I made this tonight and served with grilled sausages which I sliced and laid over the top - we really enjoyed the end result. I cut the recipe in half and it would have served 4 people as a side dish. Although I did use fresh rosemary, I felt like the recipe could have used a bit more. As well, although I did bake it, I feel like this is not a necessary step - it would have been delicious straight out of the pot.

Grilled Sausages with Caramelized Onions and Apples

This was really good - but relies heavily on using a really tasty sausage. We used turkey sausage and I feel like it would be better with pork. The apples/onions were delicious. I followed the recipe exactly using apple cider vinegar and everyone enjoyed the end result.
