Cornbread Stuffing Southern Style

Reviewed: Mar. 31, 2003
I remade this recipe & did some revising. In the end, my husband loved it while my teens liked it. Here is what I done. (1) I used only 1 1/2 cans of chicken broth (Use less if you want firmer or bake at 350 for 20 minutes if it's to soupy.) (2) I omitted the yogurt & added 1/2 cup sour cream. Big difference in taste. (3) I added another can of cream corn to mix. (4) I used garlic powder instead of cloves. (5) I used margarine instead of butter. (6) I added 4 tbsp of sugar for a sweeter taste. (7) I scooped everything into a micro safe dish and nuked on high for 5 minutes for extra firmness. Much quicker then oven. (Make sure to use a big enough bowl or it will spew over.) With this revised...I can give this recipe 5 stars! Takes about 30 minutes to prepare alone.

Eve's Chicken Quarters

Reviewed: Apr. 1, 2003
If you make this dish, reduce the water to 1/2-1 cup of water or it will take 3 hours to cook down like mine did. Other then that, my clan loved it...or it could be because they were starving because of the time it took to cook. Either way, I'll try this one more time. I did enjoy the rice. With or without the chicken, I'll cook up the rice with all the other ingredients. Excellent flavor!

Tater Tot Casserole II

Reviewed: Apr. 9, 2003
VERY teenage friendly! I used cream of chicken soup instead and it was awesome!! My husband & I liked it but it was my 3 teens that gobbled this down. The ONLY problem I had was not "oiling" my casserole dish down as suggested and I used Pam spray instead. Next time I'll use cooking oil.

Sarah Contona's Sweet Potato Pie

Reviewed: Dec. 27, 2002
I made this for BOTH Thanksgiving & Christmas. I ate ALL of it!! And you know what is sad? I HATE sweet potatoes...always have. This dish will be at EVERY holiday gathering now and some in between. On the 2nd batch I decided to try marshmellow cream instead of melting marshmellows...BIG MISTAKE! Take the time & melt them. The taste is so much better but either way I ate way more then I should have. This is a MUST TRY for ALL sweet potato haters. Awesome!

I rate this recipe with 5 stars because the taste is excellent but what it does to the body deserves 10 stars!

Carrot Souffle

Reviewed: Dec. 27, 2002
This is a good dish for my youngest teen (13). She loved it. My other 2 teens wouldn't touch it and my husband took a tiny nibble & that was it. I enjoyed it with the rest of the dinner but not by it's self. I always had another bite of food at the same time on my fork -- that made the taste better for me but I give this recipe 3 stars & a place in my recipe box for my daughter & that's where it ends. If you aren't a carrot lover, you probably won't like this dish.

Best Spinach Dip Ever

Reviewed: Apr. 2, 2003
Way to much sour cream for me. Next time I'll reduce it & see how it goes. I also prefer a thicker dip & I did add another pkg of spinach but it was just to "watery" I think this recipe has great potential with some revising for my own satisfaction.

Chicken Hurry

Reviewed: Mar. 31, 2003
When you are done eating this dish, you will have to go to church and ask for forgiveness. Sinfully good!! -- If you have extra sauce like I did (I didn't use enough chicken quarters), try it on your baked potato. -- Can't wait to make this one again!

Awesome and Easy Creamy Corn Casserole

Reviewed: Dec. 17, 2002
MOUTH WATERING DELICIOUS! I'm not a corn person but this was fantastic! I made it prior to thanksgiving to give it a trial run & ate myself silly. Figured I'd hold off & make it for Christmas. Husband didn't like it when it was 1st made but left in the fridge overnight seemed to enrich the flavor & it was even better. I had to fight my teens for a spoonful. I did omit the whole kernel corn & doubled on the creme corn. Awesome! Now printed & put into my recipe box. Hurry up Christmas dinner!!!! HALL OF FAME RECIPE!!!
