Chicken Pot Pie IX

I have a milk allergy so I made a couple of changes. I used vegan margarine instead of butter, unsweetened almond milk instead of milk, and a homemade vegetable broth instead of chicken broth. I also made the pie crusts from scratch. I made them in small tins to be frozen. The results were wonderful. My son and husband are critics of pot pies and this have been their favorite.

Slow Cooker Carnitas

This turned out fantastic. I have a family of critics of mexican/southwestern food and they devoured this! I cooked it overnight and used it for taco salad at lunch the following day. Will be making again.

Amish White Bread

I live at a high altitude so was skeptical, but the bread turned out wonderful! I reduced the sugar to 1/2 cup and may reduce it a little more with the next batch. Other than that I made no changes. I also have a milk allergy, so it was nice to find a good bread recipe without dairy. Definitely a keeper.

Angie's Dad's Best Cabbage Coleslaw

Great recipe! I am allergic to eggs - so coleslaw with mayo is out. I was happy to find this and happier yet with the final product. I did add fresh chopped cilantro and celery seed.

Miracle Soup

This is a favorite with a couple of my family members. I've found the cilantro a huge key and almost always substitute kale for the spinach. The spinach will 'melt' into the soup. The kale holds shape better.

Spaghetti Pie III

My daughter has difficulty with wheat so I made some adjustments. I used quinoa pasta, substituted ground turkey for the beef, and have experimented with different combinations of cheeses. Each time it came out wonderful and heats up great the next day for lunch. I did add some butter and Parmesan cheese to the pasta before putting it in the pan. It seemed to enhance the recipe.

Beaker's Vegetable Barley Soup

I substituted some ingredients by using my own beef broth, mixed dried beans/lentils and fresh organic corn. I did use primarily organic ingredients and simmered the soup in the crock pot overnight. It turned out great. Will be making this again.

To Die For Blueberry Muffins

I used buttermilk in place of milk and used fresh, organic blueberries. They turned out wonderful! I also froze half and found they heated up well right from the freezer.
