In 1995 I graduated from a trade school, I studied Commercial foods.
After one bad experience in a restaurant I quit cooking for close to six years.
Professionally that is.
And in 2001 I met a lady that told me that I had something special in me and that I
should come work for her in her Alzheimer daycare center being her kitchen manager.
I only managed myself, but I was back cooking.
The same year I answered an add in the paper for a private home chef and a few people
on the side that paid me to cook meals and freeze them for later use.
Stopped cooking after the center was closed down do to lack of private funding.
2007 got hired at a private school with a gourmet chef catering food program,
and have been there ever since.
My favorite things to cook
I don't really have a favorite thing that I enjoy cooking.
I am willing to try anything once. But I would have to say
I enjoy eating Asian and Italian food the most. So they are
more often cooked for myself and others.
My favorite family cooking traditions
My mother was an immigrant she never let me see what any of her recipes were or allowed me to watch her cook.
She has since pasted away and all I am left with are my memories of her and the
smells and taste of her cooking.
I can't ask her any of her ingredients or what family dinners were from her childhood.
Plus she would remind me that she came to America to make a better life for us.
That I was not allowed to become a domestic.
But wanting to savor every memory of my childhood, the good and the bad made me turn to cooking.
I wanted to taste her chicken soup again, her split pea soup again . I wanted to know why her recipes were so different from anyone else' recipes I read or tried. I wanted to hold on to her in so many ways good and bad.
I understand now that some times we did not have much and other times we had plenty. That was the times that she kinda followed a recipe. She always made a little twist, a little change that made it hers. I cherish that gift she gave me.
My cooking triumphs
I do have a few dish that I make only on special occasions and that would be my (short ribs in blackbean sauce)or (cinnamon roll bread pudding) or (chocolate candy triffal). I love to watch people take that first bite. In that moment everything I have worked for is there in that look of joy in there face.
My cooking tragedies
I have had so many tragedies,that I could be here all night listing them all.
My worse would have to be at late Meatloaf. Every meatloaf I have made a work in the past year has gone the way of me holding my head saying how?? I am great at meatloaf at home, but at work it has not worked. And this is only this year that it has happened.
I know there is more to come tho.
