Apricot-Mustard Grilled Pork Tenderloin

This was good... I marinated the meat prior to the grilling, but still felt like it was missing something. I did use an indoor grill and didn't have any liquid smoke to give it that smokey favor... that could be what I was missing.

Melt-In-Your-Mouth Short Ribs

Oh my gawd! Why this recipe isn't rated higher - I don't know. This was yummy for my tummy! I did make some modifications for example, used a dutch oven, I cooked the garlic and onions first in butter then added the meat and cooked until brown. I also added fresh thyme to the dish and my cook time was a lot less - I believe about 2.5 hrs. This is definately a keeper.

Herb-Crusted Chuck Roast

This recipe provided me with an awesome new way to prepare chuck roast. I didn't have any savory or rosemary so I used tarragon - FABULOUS! As an earlier post suggested, I used panko bread crumbs for the crunch. I took the drippings from the roast and make a gravy in additon to the horeradish sauce. Super D Douper!

Mango, Peach and Pineapple Salsa

I thought the salsa was great and it was a huge hit in my house hold. I served it to my family over BBQ chicken. The chicken was based in a smokey bbq sauce then the salsa poured over it. The recipe makes a lot of salsa, so I used it the following day as a dressing to a grilled salmon and bleu cheese salad... can you say... AWESOME!

Tartar Sauce II

Yummy! I made the sauce as directed less the egg. The capers are a must. They provide a very flavorful addition to the sauce.

Beer Batter

This is an awesome batter. I've tried to fry fish before with little to no success. This was easy and a household hit. I made the batter as directed. I used cod and blotted it dry with paper towels then add lighly salted and peppered prior to dipping in the batter. Because the batter was thin, I kept it refrigerated. If you like the consistancy of temperura batter, you'll love this. I also used this batter and seasoned it a bit for onion rings.

Homemade Coleslaw Dressing

I made a buffalo chicken sandwich and used this dressing on the coleslaw for the sandwich. It was a great contrast to the buffalo sauce and blue cheese crumbles on the sandwich. I would make it again.
