Crab Quiche

I'm giving this five stars because I used real crabmeat; I live in Maryland and it's relatively reasonable. Even if you're land-locked, you can buy canned crabmeat in the tuna aisle. Friends don't let friends (or relatives) eat the fake stuff!!!

Hot Crab Dip

I'm writing to tell anyone who's considering making this dip, DON'T DO IT! It smelled awful while it was baking, which should have been my first clue. Even the cat didn't come around the kitchen. I had to work Christmas and this was going to be my contribution for our unit's party. I was hesitant, but I hoped the dip would taste better than it smelled. Where I work, the doctors and nurses would probably eat a bowl filled with grass clippings and twigs if you put salad dressing on it. No one touched this stuff... What a waste of some expensive ingredients. I'm only giving this one star because I can't give it ZERO.

100 Percent Whole Wheat Bread

One detail: If you've had breast cancer that was estrogen-receptor positive, you should avoid flax seed and flax meal. Either leave them out, or add more of the other seeds.

Italian Spaghetti Sauce with Meatballs

These were easy to make, but absolutely tasteless. I would have cut down on breadcrumbs and increased the spices had I taken the time to think about the combination of ingredients. I had to add water to the mixture to make it moist enough to work with. I'm certain there are recipes for better tasting meatballs out there. Don't bother with this one.

Chicken Marsala

Very easy to make. It smelled and tasted heavenly! When I took the lid off the skillet at the end, my immediate reaction was "restaurant quality." I served it over plain pasta, but rice would be good, too. The only change my husband (the garlic fanatic) suggested was to add some fresh garlic to the liquid. I made 8 boneless breasts (using 1/2 cup flour) and saved two for my kids before adding the mushrooms and wine. My daughter thought the chicken tasted like "Popeye's." This one is staying in my recipe box. Thanx, Lisa!

Pizza On The Grill I

Wow!!! Our Sunday night tradition for years has been to make a whole wheat crust pizza. I've tried many recipes and finally bought a pizza stone. Never has it come out the same way twice. The pizza stone in the oven helped with the crunchiness. So that was improvement. Then I said why waste the beautiful weather and my gas grill? Found this recipe and used about 4 cups whole wheat flour, 1 T yeast, 1/2 tsp sugar and almost 2 cups water in my bread machine. I eyeballed the consistency so it held together well but was still sticky, letting the machine mix for 8 minutes. Let it go through two rises, fired up the grill, and away we went! The only thing I'd do differently next time is make two small pizzas instead of one mega rectangle. Don't know what I was thinking - it was a challenge to work with! But I convinced it to work, hubby helped me with the first flip so we were ok. We put onions, green peppers, mushrooms, and I had pepperoni on my side. Sooooo good. I can predict that we will be spending future Sundays overt the grill, weather whatever! Thanks for this wonderful recipe!

Mrs. Sigg's Fresh Pumpkin Pie

I had pumpkin puree in my freezer left over from another time I roasted and scooped a pumpkin. I defrosted it and then cooked it on the stove over low heat for about an hour. That really helped to thicken it up. Since I only had 1.5 cups of the necessary 2 cups of puree, I microwaved a couple of small sweet potatoes, peeled and mashed them, and added 1/2 cup of that to the pumpkin. That really put the pie over the top! I made my pie crust using the Crisco recipe... it never fails. This recipe is a keeper!

Authentic Cincinnati Chili

It was good but way too salty. So while it simmered and I taste-tested it, I ended up adding sugar, way more cinnamon, a bit more powdered clove, and some nutmeg. My recommendation is to go to a restaurant that knows how to make Cincinnati chili, then you can take a recipe like this and tweak it to your taste.
