Black Bean and Corn Salad II

Fabulous recipe! I was worried that the salad might possibly have too much salt, but I did not change a thing and the salad was amazing!! Everyone loved it. I went with fresh lime juice which truly makes a world of difference. I also added the cilantro although I only used about 1/2 cup which was perfect for our tastes. Some suggested that there was too much oil, but I would not agree. I used a light flavored olive oil so maybe that is why the oil was not a problem for us. Thank you Jen, for a recipe that I am sure we will make again and again. :)

Delicious! I've made this many times with a 16 oz roll ground Italian sausage, and sliced, fresh mushrooms (layered as rest of ingredients are).

Cajun Chicken Pasta

Loved this recipe! I'm a college student, so I changed a few things. Instead of adding 1 1/2 cups of heavy cream, I added 3/4 cup cream 3/4 cup 2 percent milk. It was cheaper to buy the smaller bottle of cream, plus, cutting down on the cream cuts down on calories. Also, I only put in one whole green pepper and placed this in a bowl with the green onions and sprinkled a little bit of lemon juice over the top. I tossed it, and then put it all in with my sizzling chicken and the cream. DELICIOUS!! I highly recommend this recipe! My boyfriend and I really enjoyed it. Thankyou Tammy for sharing! :):)
