Baked Kale Chips
These are sooo yummy. The Kale pieces should be on the bigger size and really watch them in the over, because they go from limp to overcooked in seconds.

Turkey and Quinoa Meatloaf
I have made this several times. It comes out great. a nice change from the traditional meatloaf.
