Fish Tacos Ultimo

This is the best fish taco recipe! I used swai fish fillets and coated them in lime juice then some blackening seasoning. I grilled them in a pan with cooking spray about 4 minutes per side. I also sprayed the corn tortillas with the cooking spray on each side before warming, which worked great to make them soft and delicious! I topped them with the adobo sauce, which is definitely the key to the recipe, and homemade salsa and cabbage. These are as close as I can get to our local restaurant's famous fish tacos which are pretty much my favorite food!

Vegan Broccoli Soup

This recipe is fantastic. The texture is perfect. I added more spices, including a good deal of black pepper, some cayenne, coriander, garlic powder, onion powder, and oregano. I also soaked the cashews for a couple hours in broth before blending. Otherwise, followed the recipe and, like I said, Loved it!

Thai Curry Tofu

This recipe is fantastic! I have made it several times, and had trouble getting a flavorful meal for a while. The key I have found is to use a GOOD CURRY. I buy mine bulk from the local natural foods store, but when I was using a generic brand curry I simply could not get a full flavorful dish. With the good curry I finally found, I use about 2 tbsp of it and I add a little spice to the dish as well, usually sriracha. I also add in frozen veggies like broccoli and peas when I add the coconut milk and spices, and that typically allows time for them to thaw and cook while it is simmering. I always use extra firm tofu and 'press' my tofu before cubing and cooking. This involves placing on a cuting board or other surface and stacking books or other heavy items on top. I additionally always cook my tofu on medium-high heat for a while to get nice crispy edges. All in all, this recipe will turn out great if you use a good curry spice!

Tofu Lasagna

This is a great recipe! I made some adjustments as follows starting with the first time I made it based on my personal opinion and some reviews. I sauteed garlic, and mixed that with a couple cups of frozen spinach, the tofu, and some crushed red pepper. I mixed in one egg, some garlic salt and pepper, and 1/2 Cup grated Parmesan. I then mixed in a little bit of spaghetti sauce and a little mozzarella. I used the rest of the sauce and mozzarella to make separate layers in the lasagna - tofu mixture, sauce, cheese, noodles, etc. The tofu mixture i got from a different recipe for tofu lasagna rolls, which I have been making for a while! It was great this way, and probably great the original way as well!

Ginger Chicken Stir-Fry

I made this with tofu - great recipe for it! I use a little less chicken broth, a little more soy sauce, and add sriracha to the sauce to give it a kick. It tastes fantastic!

Quinoa and Black Beans

This recipe is fantastic. I just used 1 can of black beans, and added some Eastern ethiopian spice a friend gave me, called berbere. It was amazing, and I used the mix in stuffed peppers! Really flavorful and filling!

Fettuccini Alfredo I

This recipe is great for an alfredo. I really like that it doesn't require any type of cream, because that means I always have the ingredients to make it and don't have to buy anything special. And it is creamy and delicious! I will probably never use another recipe for alfredo, and this was my first one!

Shish Tawook Grilled Chicken

Really easy and really delicious! We LOVED it! We followed the recipe, but didn't have allspice or cardamom, so used a little ginger, coriander, and cumin instead of those. Also added a little cayenne, will probably add even more next time! We also made a little bit additional marinade and set it aside to use as a sauce of the rice we ate with it. Highly recommend this recipe!

Homemade Black Bean Veggie Burgers

These burgers are awesome! This is the first recipe I tried, and I don't think I would change anything or try another one. I just finely chopped the pepper, onion, and garlic, and mashed it a little bit into the black beans. I have my boyfriend pack them really tight, the way he did it when he worked at 5 guys, and they do not fall apart! You just have to make them super tight. The spices are great and the burgers have as good of consistency as you can get with black bean burgers.
