Grilled Bacon Jalapeno Wraps

The yummiest way we have found to do these, is to follow the directions, but after you have wrapped them in bacon, roll them in a mixture of 1 c. brown sugar mixed with 1 Tbls. chili powder. Then cook. We have baked them on a broiler pan at 400 degrees for about 20-25 minutes, or until bacon is crisp. There is never any left and everyone wants the recipe!!!

Fresh Broccoli Salad

This is definitely one of my families favorites! I use craisens instead of raisens, and apple cider vinegar instead of the white wine vinegar. It's a super simple salad to throw together especially if you buy the precooked, crumbled bacon. I always get many requests for the recipe!

Chili Relleno Casserole

Very easy and delicious! I made it with fresh chilis, a little less cheese, and I used 1 1/2 cans of the enchilada sauce. I think next time I will only use one can of sauce so it wont be quite so runny. Super easy!

Excellent! I made them with blueberries and white chocolate chips. Then glazed them with an orange glaze. I did have to add more flour since I used all the milk-egg mixture. I added the white chocolate chips while stirring, but waited to add the blueberries until I was rolling it out. After rolling it out I spinkled the blueberries on the top and gently pressed them into the dough, then I folded it in half and rolled it out again, repeating the same process. I cut it into the 8 wedges as directed. They were HUGE! I made the glaze with powdered sugar, orange zest and fresh squeezed orange juice. Thanks for a great recipe!

Peach Salsa II

I really liked this salsa, although I only used about 1/16 of the sugar it called for and 1/3 of the pectin. It was very good but not too spicy so I made it again with these alterations. I added extra red peppers, onion, and jalapenos. I didn't use any cumin or pectin, and still just a small amount of sugar. (I quadrupled the batch and only used a 1 Cup total of sugar) It was FABULOUS! My family liked this version even better!
