Easy Pumpkin Muffins

These definitely live up to their name: Easy. I prepared them exactly as the recipe stated other than using a mini muffin pan (baked for about 10 minutes). They weren't the best muffins I've ever had, but I'll probably make them again just due to the simplicity.

Oklahoma Cheese Grits

These were sooooooo good. It was my first time to make grits and I definitely was not disappointed! The only problem I had was getting the cheese to melt. I was in a time crunch, so I didn't let it melt all the way through. They still tasted awesome and it was a nice little treat when you got a blob of cheese!

Outrageous Warm Chicken Nacho Dip

This dip was an excellent variation from the traditional Rotel! The only thing I changed was to leave out the black beans just for personal preference. I put everything together the night before, heated in the microwave (stirring every 2 or 3 minutes), then transferred to the slow cooker to keep it warm for serving. Definitely recommended!

Gooey Butter Cookies

Chicken Enchiladas II

I took this to a Mexican themed potluck at church and the dish was completely cleaned out! I added a can of diced tomatoes with chiles, but for the most part left the rest alone. I fiddled with the filling to get more out of it, so I'm sure it wasn't exact. Definitely a keeper though!

Cranberry Salad III

This recipe was so good! The only thing I changed was to use a box of cherry jello and a box of raspberry instead of two cherries. This was completely finished off at our Thanksgiving meal. And that's saying something considering there was a TON of food with lots of choices. I'll definitely be making this again all year round!

Green Onion Dip I

This dip was so-so for me. I used a half block of cream cheese and a half cup of mayo right off the bat because I don't care for an overpowering mayo taste. Even with that change I thought the mayo took over the whole flavor, so I added additional sour cream and onions. I also tweaked with a little ranch dressing and garlic salt. I will say that it was better after it sat overnight. I didn't hate it, but most likely won't make again.

Banana Pudding IV

This recipe turned out AWESOME! I followed it exactly with the only exception being an extra layer of cookies and bananas in the middle. I was concerned when the cream cheese didn't blend well and left tiny lumps throughout the pudding mixture, but once it was all put together, you couldn't tell a bit and the taste totally made up for it! My bunco group LOVED it and I've already sent out the link to the recipe! UPDATE: I made this a second time and mixed the sweetened condensed milk with the cream cheese, then added the pudding and vanilla, following up with the milk a little at a time. This helped the consistency tremendously! Very smooth, no lumps! Another hit :)

Tortilla Rollups IV

This recipe was incredibly easy and made a TON! I had two layers of them on a huge platter for bunco and every single one of them were eaten. I still had 6 tortillas that I didn't even slice (due to lack of room) in the fridge! My husband took them to work today and they were devoured immediately. The only thing I changed was to use a block and a half of cream cheese and half a cup of sour cream instead of equal parts. I also sprinkled diced green chiles on top. Excellent, EASY recipe!

Easy Cheese Ball II

For a first time cheese ball chef, this was perfect! The hardest part is stirring the cream cheese. The flavor was great and it was a hit at the Bunko party I served it at. It does make a rather large ball though. Might half it next time.

Pumpkin Fluff Dip

This is definitely a great dip. Something different from the usual. I used cinnamon graham cracker sticks which worked perfectly. The only problem with this recipe is that is makes SO much dip! Next time I'll definitely only make half.

Ship Island Shrimp Dip

This recipe was good, but not mind blowing by any means. I did use the entire package of Italian dressing mix, but thought that helped instead of hindered. Next time I think I would add more shrimp. You could barely taste it. All in all a fine appetizer that I will make again with just that little bit of tweaking.

Buffalo Chicken Dip

I made this last night for Bunko and it was devoured! I've already had to email the recipe to everyone today. The only thing I changed was to use 4 smallish chicken breasts that I baked in foil for about 30 minutes as opposed to the canned chicken. I just don't like the thought of canned meat too well. It definitely wasn't the prettiest dish, but certainly the tastiest! I will be making this again for our Christmas party, but doubling the recipe!

Barb's Broccoli-Cauliflower Salad

I definitely liked the dish as did everyone else at Thanksgiving. It was a nice cold dish to go along with the rest of the feast. I did make a few changes. I'm not a big fan of raw onions or sunflower seeds, so I left those out. The mayonnaise taste was a little overpowering as well, so I added much more vinegar than the recipe called for. It turned out great!

Fabulous Football Dip

I was looking for something quick and easy that my husband could make in a hurry while I was at work. This was PERFECT! He made a double batch for a party we were attending that night and it was completely gone by the time we left for home. No one could believe how simple it was! Great recipe.

Italian Beef in a Bucket

I thought the flavor was nice. I noticed at the halfway point that most of the liquid had been absorbed, so per a friend who makes a recipe similar, I added a can of beer. By the time the 18 hours were up, the meat was very dry. I think I'll try cooking only 8 hours or so with the same amount of liquid. I don't think it would affect the taste much at all.

Angel's Old Fashioned Beef Stew

Everything turned out great and the flavor was exactly what I expected, but I ended up having to cook it for over 4 hours as opposed to the suggested 2 hours in order to get the vegetables tender enough to eat.
