Asparagus, Chicken, and Pecan Pasta

I wanted to make this as Paleo-friendly as possible so used Ghee instead of Olive oil and omitted the butter. I didn't have the pre-grilled chicken but just fried up some tenders before sauteing the vegetables. (Removed chicken from the pan & added back at the end.) I used quinoa pasta but followed the recipe otherwise(went light on the parm)and I am eating it as I write this review. I find it to be light and very flavorful!I did use another reviewer's suggestion and broke up the pecans and lightly toasted them.

Simple Tuna Melts

I liked this twist on my boring old plain recipe that I have been making for at least 50 years. I used sweet pickle relish instead of jalapenos, Did add a small amount of mayo and used another reviewer's suggestion of shredded cheese in the mix. Baked open face in the toaster oven and was quite pleased with the result! I plan on trying it with dill and maybe a different shredded cheese. The jalapenos might be good with Monteray Jack! Thanks for teaching this old lady a new trick!

Zesty Slow Cooker Chicken Barbecue

I am giving this 5 stars even though I didn't make it exactly as described as I am sure the original recipe is delicious. I was anxious to try it but wanted to use things on hand. I used frozen chicken tenders, Spectrum barbeque sauce and added dark agave syrup instead of brown sugar. I didn't have ready made Italian dressing so I just added some olive oil and white wine vinegar with Italian spices. I cooked for 4.5 hours on low and ended up with a delicious meal!

Sesame Beef Bites

I decided to try to adapt this for a slow cooker. I know this is a quick recipe, but I wanted to use a cheaper cut of meat and didn't want to deal with marinating (I often forget about it in the fridge). I happened to have some bottom round sliced for carne asada so I just sliced it into strips and tossed with all the ingredients except the green onions and sesame seeds. (I don't think green onions lend themselves well to slow cooking). I cooked on low til fall apart tender, sprinkled on green onions and sesame seeds and family enjoyed it over rice. I am giving 5 stars because I didn't change the ingredients. This was very flavorful and i will try it again with different cuts of meat
