Beef and Biscuit

This was pretty tasty for a different, quick throw together dinner. My husband enjoyed it and has been eating leftovers for lunch. I didn't have a chili pepper so I added a can of Rotel tomatoes along with the tomato sauce. I left out the egg. The meat filling was moist and flavorful. Hubby suggested adding corn to the filling, so I'll do that next time. There will be a next time. :)

Japanese Beef Stir-Fry

I only used the broth recipe, and used chicken broth instead of beef, but it was really good. Nice consistency and it gave the extra flavor/sauce needed with my chicken and veggie stir fry over white rice.

Chili Mac Casserole

Italian Pork Tenderloin

This was really pretty tasty. The flavor of the sauce was very nice. After reading the reviews I decided to make a double batch of the sauce. Glad I did, but it was a bit too thin. Next time I will thicken it a little more. Also served it over penne, and next time I will use a thinner, smaller pasta. We had the leftovers a few nights later, and I almost think it was better. Maybe the flavors of the sauce had more time to marry. I will make this again, it is nice to do something different with a tenderloin for a change.

Glazed Pork Tenderloin

I was curious how this would taste with the horseradish, and in fact I only added about half the amount. It was really tasty and I could have put more horseradish in the sauce. I grilled the tenderloin and slathered the pineapple on during the last bit of cooking. I really liked how the rosemary complemented the pineapple. Will definitely do this one again!

Meatball Nirvana

YUM! I doubled the recipe and did it according to the recipe, except no hot sauce and I used minced garlic instead of garlic salt. They were moist and delicious!

Pumpkin Cookies V

I don't know if it is my taste buds or if I did something wrong, even though I followed the recipe as is except for adding a bit of pumpkin pie spice. To me they lacked lots of flavor when fresh from the oven, even with the icing. I took them to a friend's for dinner and was rather embarrassed because they were not AMAZING like all the rave reviews I read. However, the next day they flavor seemed to have blossomed quite a bit and they were good. By the third day they were still tasty, but getting soggy. The recipe makes lots and lots of cookies, if you are not baking for a small army then cut it in half.

Apple Pie Bars

This was a very tasty recipe. However the name "bars" is misleading because it suggests a finger food. It is really an apple pie in a 9X13 dish. It is cut into bars which hold together nicely when cool, but it is really too messy for a finger food. I chopped 6 Granny Smith apples and it was plenty for the apple layer. I made only one change and that was cutting the sugar to 3/4 cup. I think next time I will leave the glaze off as it really didn't add much to the overall flavor. Maybe for a variation I will add some craisins to the apple filling the next time. But it got rave reviews from my friends, so overall it is a good recipe just as it is written.

Chicken Pot Pie VIII

This is a great recipe! My son raved about it and has been requesting it since I made it last week for the first time. I used leftover roasted chicken that I flavored with garlic, onion, celery etc. and I also used the broth from that chicken. The gravy for the pie was delicious and just the right thickness. No gooey canned soup that tastes processed. I cooked the veggies and potatoes in the broth for a bit to soften them. Only one thing I will mention regarding the crust, after about 4 TBS of water, just add one at a time. You will need more or less depending on the humidity in the air.

Toasted Pumpkin Seeds with Sugar and Spice

These were so delicious! My mom said they tasted like snickerdoodle cookies. I like savory pumpkin seeds, but it is nice to have a sweet recipe for a change. Even better than the sweet seasoned nuts you find in the stores!

Mom's Simple Dumplings

These dumplings are excellent! I have used the same recipe for years, but now I will switch. These are lighter and fluffier than mine. It doesn't make too many though, next time I might try doubling it, three hungry boys eat lots of dumplings!

Best Tuna Casserole

I needed a recipe because my favorite one is packed in boxes....not as good as the one I usually use. Bland, but I didn't want to add anymore salt because of the 2 cans of soup. I made the mistake of not tasting until it was on the table because how can you screw up Tuna Casserole, right? Too late at that point to add anything else. I will use my own recipe in the future.

Penne Pasta with Spinach and Bacon

This was a really good and easy dish. I added a bit more bacon the second time I made it per hubby's request. I also added a nice quantity of Parmesan cheese. I think next time I will try fresh tomatoes instead, as the canned tomatoes taste, well, canned....One more thing, mine certainly wasn't as pretty as the picture above, wilted spinach doesn't look so nice.

Debdoozie's Blue Ribbon Chili

This got rave reviews from my hubby's poker pals tonight. I used the Chili Seasoning Mix II for the seasoning and medium Pace Picante sauce. It was pretty spicy for me, but the men loved it. They said it's a keeper. :)

Chili Seasoning Mix II

Hubby had poker tonight and I used this mix as the seasoning for Debdoozie's Blue Ribbon Chili. I got "thumbs up" and "it's a keeper" all around. A bit spicy for me, but the men loved it.

Fluffy Biscuits

These biscuits were really delicious! I have tried many recipes, and these really baked up well. Light, fluffy and tender. I will use this recipe all the time now. I have never made biscuits that called for an egg, maybe that is the difference. I used shortening, not butter and the texture was great.
