Carol's Cinnamon Waffles

I decided to try this recipe on a whim after it was emailed this morning. I must say that these waffles just melt in your mouth. They are soft & most importantly flavorful. I've tried other waffle recipes & NOTHING compares to this. Enjoy!!!

Maria's Pepper Steak

This marinade was awesome. I used this to make a round steak for my boyfriend (1.38lbs-2). I used all of the ingredients in the recipe except red wine vinegar. I used rice vinegar instead. I reduced the amount of soy sauce, honey, and vinegar to start off with (2 tablespoons each) and added as I went along until I achieved the desired taste using freshly grated ginger, crushed red pepper, & water. I used a meat tenderizer on the steaks, slit them diagonally on both sides, and seasoned them as I would any other meat. I let that sit while I sauteed the onions, pepper, & mushrooms in olive oil & then placed them in a bowl to the side. Then, I pan seared the steaks on medium high heat for 10 minutes, 5 on each side. I added the vegetables to the pan first, & then 1/3 of the sauce. Over the course of simmering the steaks covered for 2 hours, I added the remaining sauce, & alternated 1/2 teaspoon of corn starch & water to thicken sauce & reduce the salt flavor. My boyfriend LOVED this. This was my FIRST time cooking steak & thanks to Maria, it was a great success!

Dutch Cream Waffles

Very good recipe. I added 4 tablespoons of sugar and 1/4 teaspoon of vanilla extract. The ONLY issue that I had was that this recipe yielded 2 waffles from my Belgian Waffle Baker. I would have to double and/or triple this recipe for larger gatherings.

Coconut Pie

I was VERY pleased with this recipe. I baked tart coconut pies for a friend and this recipe was very easy and delicious. I did make a few minor changes per other reviewers' comments. I used 1 cup shredded coconut, 1 cup of coconut milk, and 1/2 cup of condensed milk. Very sweet to the taste, which is a huge plus for me!!!

Coconut Cream Pound Cake

This was a hit for Thanksgiving. I did make the following changes per my Granny's recipe along with other reviewers' comments: 3 sticks of butter vs 2, 1 teaspoon of vanilla extract, 2 cups of dessicated coconut, cake flour, 1/8 teaspoon of salt. I also made sure that all ingredients were at room temperature prior to mixing. Also, I baked at a temperature of 300 starting in a cool oven (no preheating). This recipe yields enough batter for a bundt pan & a small loaf pan. It was VERY moist & delicious.

Grandma's Famous Salmon Cakes

This is a great recipe. I made the following additions/changes per my mother's advice: green onion vs. white/yellow onion, lemon juice, Worcestershire sauce, salt, hot sauce, old bay seasoning, and miracle whip. I also used extra virgin olive oil to fry the patties. These go great with grits. My entire family is from Charleston SC so dishes like these are a household staple. My granny will sometimes fry butts meat, break it into pieces, and then mix in the aforementioned ingredients without making them into patties. EMJOY!!!!

Whole Wheat and Honey Pizza Dough

This was my first time making pizza from scratch and using whole wheat. I used 2.5 cups of whole wheat flour vs wheat germ, a little extra honey, & a garlic/herb salad dressing seasoning pack to add flavor. It was enough to make a medium/large pizza. I placed it in the oven on warm for 30 min to rise in an airtight container, refrigerated it over night, & used the next day. I also baked it in the oven for 3 min prior to adding my homemade pizza sauce and toppings. The sauce definitely made all the difference regarding the flavor of the bread. I will definitely be using the recipe again.
