Summer Nights Eggplants

I left out the green peppers (dislike with eggplant) and bread crumbs. It was rather tasteless so I added lots of dried basil and more garlic. Topped with feta cheese, it was tasty.

Quick Chick

Of the 3 adults (kid wouldn't try it) at the table, 2 gave it a 3 (not enough taste, not attractive) and 1 gave it a 5. It was too watery so if I make it next time, I will drain the mushrooms. I would also add a touch of cornstarch to the soy sauce to make more of a coating for the chicken and veggies. Garnishing with chopped green onions would help with the appearance.

Slow Cooker Homemade Beans

Having been taught by my mom and grandmother to presoak the beans overnight and cook them plain prior to adding anything else, I did just that. I then added everything except the bacon (wanted vegetarian beans) and water. I added 1/2 cup of the bean cooking liquid. Next time I will add more liquid. Excellent taste. Too sweet? Maybe but not by much.

Cornmeal Molasses Bread

This bread baked beautifully in my Zo. It is very soft and flavorful. If you don't care for molasses, be sure to use a light one. (I love molasses so it was perfect for me!)

Maraschino Mini Muffins

This recipe is very good, making a cake-like muffin. I doubled the recipe (using a total of 1 c. halved cherries mixed in the batter, no almond extract, 1 t. baking soda because my milk was a bit sour and topped each muffin with a cherry) thinking it would make 24 regular-sized muffins. It made 39! It took 18 minutes to bake the regular sized muffins.

Oven Scrambled Eggs

Excellent, excellent! I omit the butter and just spray the pan with cooking spray. Everyone loves them, especially DS who prefers his scrambled eggs cooked this way.

Banana Oat Muffins

Excellent muffins...DS really enjoyed them. A bit too moist (oily?), thus the 4 stars. Next time, I'll reduce the oil and add applesauce.

Cinnamon Rolls

Excellent! I used the bread machine, dividing all ingredients in half except I used 3 cups bread flour for each batch. Wonderfully soft and easy dough to work with. I added raisins to the cinnamon-sugar (I used brown sugar) mix.

Brownie Crackles

This rates 5 stars for taste. However, using an 18.3 oz. package of fudge brownie mix, I had to add 2 1/2 cups of flour to get a batter which I could scoop and roll. This made it a bit stiff so next time I'll only use 2 1/4 cups of flour (at 2 cups of flour, the batter was still too thin). Also, I can't wait to try the recipe again and use raisins instead of chocolate chips. Oh...with the addition of the flour, it made 67 cookies! Terrific as I now have some to share!

Dee's Special Chicken

When mixing the herbs together, I thought the sage was too strong. So I only added the rosemary and thyme to the dish. It seemed blah so I added a bag of frozen pearl onions and a can of sliced mushrooms, drained. I thought the dish was tasty but my husband said it was not--thus, the 3 stars. I doubt I'll make it again.

Quick and Easy Alfredo Sauce

This works well even with low fat ingredients. It does thicken really fast (thus the 4 stars)--too fast, I had to add more milk (and more cheese for flavor).

Applesauce Noodle Kugel

This was just ok as far as kugels go. Not bad but no apple taste at all. I did reduce the sugar because we don't care for too sweet foods and it was still sweet.

Slow Cooker Tipsy Chicken

Of the 5 adults at the table, 2 rated it a 5+, 2 a 5, and 1 a 2 (but that was DH who doesn’t like food cooked in a crock pot!). I had 13 skinless, boneless chicken thighs and there was no need to increase the sauce ingredients. After browning the chicken (this really didn’t seem needed), I used the wine to deglaze the pan. I also mixed everything else (used canned mushrooms, drained the olives, no salt) in the pan and poured it over the chicken. The chicken was melt-in-your-mouth tender. The only comment was that it could be a bit spicier. Next time, I’ll add more black pepper or cayenne.

Honey Baked Chicken II

I've been making this for years! I use margarine and only 1/4 cup and add 2 T. lemon juice. I also use garlic powder rather than salt. Served it over white rice to soak up all the yummy juices!
