Gluten-Free Yellow Cake

I love this recipe, but since I am so busy, I discovered Bob's Red Mill Vanilla cake mix (for a 8x13 inch cake pan.) Follow the directions. I live at altitude and didn't have to make any adj. Try it.......add bananas for banana cake plus cream cheese frosting, whatever your favorite combo seems to be. This mix is so versatile. I just bought 8 from Amazon at a great price. Ready for every season to make cakes.

Divine Hard-Boiled Eggs

Living at altitude, I followed the advice of a reviewer and let the eggs boil for 5 mins., then let sit for 15 mins. covered. I did add ice to the pan after draining and let them sit in the ice for about 15 mins (I was vacuuming) :). I couldn't wait to see if they were good, so I peeled one right away. It was perfect...thank you.

Grandma's Best Ever Sour Cream Lasagna

I made this recipe without changing a thing, except I substituted Gluten Free Rice Lasagne Noodles. Even though they were no boil noodles, I boiled them anyway (7 mins) because the cook time for the lasagne is not very long. What I love best about this recipe, is that there was no bubbling over into my oven. I truly love this recipe and so does my husband. I love the texture more than the clumpy cottage cheese I've tried with other recipes. Thank You, this now my new GO TO Lasagne recipe.

German Potato Pancakes

What a pain to make! I even partially precooked my potatoes in the micro, chilled and grated (no off color potatoes). Followed the recipe exactly. Would not stick together at all. Ended up just like hash browns. No little pancackes, so I just dumped the rest of the bowl directly into the skillet and finished it that way. I will either buy frozen hash browns or make them from partially precooked potatoes. Just a note though, partially cooked potatoes do grate up nicely in a FP and never oxidize, no drying in a spinner or tea towel. No rinsing either. Try it.

Sugar Coated Pecans

I tried this on Christmas Eve and made no changes except for the baking time. I would definitely say these are easy and delicious. Next time, I will try with superfine sugar, so the nuts are not so gritty and maybe use parchment paper for faster cleanup. Even with a greased pan, the cleanup was not so bad.

Quick and Easy Hollandaise Sauce in the Microwave

I tried the Blender Hollandaise and it was very watery. So, I tried this one as the basic ingredients were similar. The key difference was the microwaving and was I ever surprised at the results! I am ecstatic! Yeah! It thickened nicely. That's why I rated it a 5. Once I got the thickness I wanted I tweaked the lemon and added 1/4 t. distilled white vinegar (just for my taste). Thank you again and again for something so simple and now not so daunting for something so elegant.

Blender Hollandaise Sauce

I tried this recipe using a wand mixer and it turned out way too watery. I was very disappointed. I then tried the recipe for the microwave hollandaise sauce and it worked so much better as far as thickness goes (I always adjust the taste for most recipes anyway). I'll use that one from now on. It only requires a whisk. Talk about easy cleanup!
