Taco Bake I

This is a great hit with my husband. He requests it often.. I use corn instead of beans to make it more kid friendly and low-sodium taco seasoning and torilla chips to cut down on salt.

Roasted Red Pepper Chicken

Very festive! Makes a nice presentation if you put the sauce on the plate first, then the chicken and feta. Next time, I'll place the feta on the chicken just before removing from the pan so the cheese will melt a little. The kids removed the peppers and ate the chicken, but loved the sauce (go figure)!

Mandarin Orange, Gorgonzola and Almond Delight

Absolutely loved it! Substituted sunflower kernels for the almonds due to food allergy. Too sophisticated for the kids. Can't wait to serve it to friends and co-workers!

Broccoli With Lemon Almond Butter

Great change-of-pace way to serve broccoli. I thought 2T seemed like a lot of lemon juice, so I only added 1T. My husband and I loved it, but our son didn't care for the lemon. Hubby liked it so well, he now thinks this is the only way broccoli should be served.. next time, I'll set aside some for the kids before adding the lemon.

Chicken Marsala

Incredible! To die for! I made this for my husband on our anniversary.. VERY BIG HIT!! I took others advice and doubled the mushrooms, added a bit more Marsala, and eliminated the cooking sherry (didn't have any on hand). Served it over linguine noodles. Very easy and quick, yet extremely elegant. My kids even liked the left-overs!

Best Ever Chicken Casserole

I must admit, I thought this recipe sounded a little weird, but it intrigued me.. My family LOVED it! I followed others advice and cut baking time to 30 minutes. I also started with sliced water chestnuts and halved each slice and used fat-free cream of chicken soup. Fabulous! A real keeper!

Absolutely Ultimate Potato Soup

Incredible! My family loved it! The kids have been requesting nothing else. I cut the bacon down to 1/2 pound. Marvelous flavor and very filling. A real winner!
