Chewy Caramel

I am giving it a 4 only because I screwed up...so, it could have been a 5 if I were a bit braver! I let it reach 'soft ball' temp as written on my candy thermometer (which is 230 deg. F), and kept on stirring for 2 minutes. But it looked like it was going to boil over at any second. Well if at any moment I looked away, and didn't stir, it would have boiled over. So I figured, it can't possibly get any higher than this and took it off the stove. Instead of being chewy, my caramel came out gooey ;) But, it was okay...it became chocolate filling, and it was still delicious! I am definitely going to try it again...but will be a while since I have sooo much gooey caramel!! And this stuff ain't exactly kind to your hips!

Raspberry Vinaigrette Dressing

Wow, way too sweet! And I even halved the amount of sugar! I had to add more vinegar and oil just to be able to use it! I should have listened to the other reviewers and 1/4 the amount of sugar. I still have some left, and it is still way too sweet...I think I will add more balsamic vinegar, just to give it a bit more zing for the next salad.

Mulligatawny Soup II

Note: It's very hard to get fresh curry leaves in North America. You have to get it at specialty Indian stores. You can substitute a Bay leaf instead, as recommended by my Indian friend. It isn't anything like the curry powder, which is a combination of the spices used in this recipe (tumeric, ginger, corriander, cumin...etc) This soup was excellent, but very spicy. I can usually handle my heat...but this was quite hot! The recipe calls for 2 green chiles chopped up, but it doesn't say whether to include the seeds or not. So I included the seeds for one and not the other, and I think that made it extremely HOT. We had to eat it with bread...but it's still very yummy. I'll make it again, with just one chile next time.

Spinach and Strawberry Salad

Way too sweet, and I only put in half the sugar of the recipe. Next time I will only put in maybe 1 or 2 table spoons sugar. I also added red onions and pecans. I didn't have any feta to add, but will do for next time. Yummy tho nonetheless.
