Cashew Rice Pilaf

I LOVE this recipe. It is amazing. I can't believe anyone could say it doesn't have flavor. It doesn't need added spices or anything. I am not a fan of raisins at all, but they are incredible in this recipe and you would definitely lose a lot by picking them out or omitting them. I first made this for a large party and everyone raved over it. The only change I made was to sub vegetable broth for the chicken broth as I had several vegetarians in attendance. Otherwise stuck to the recipe and it was/is awesome!

Maybe I'll give these another chance someday, as I must have screwed up this recipe somehow, as we did not care for them at all. So many great reviews, it was a big disappointment.

I followed Blandina's advice and used Hersey's cocoa and it came out fantastic. I had no problems whatsoever. I actually made them for my son's class while they were studying South America and everyone raved over them.

Pizza Pinwheels

This recipe was fantastic! I made one minor change to the recipe. Once I rolled and before I cut I sprayed a little butter on top of each and sprinkled with ground oregano. Nothing heavy, just a touch and they came out PERFECT! Melts in your mouth. In fact, the first time I made them the smell alone lured everyone to the kitchen and they never even made it to the table! I found that putting the cheese down then the pepperoni on top and leaving about a 1/2 inch without anything helped when rolling. The pepperonis on top kept the cheese at bay and the extra space allowed everything to squish forward a bit without leaving excess gushing out the end of the roll. Also, the logs themselves freeze just fine, so you can make ahead, then pop out to thaw, slice and cook for a VERY quick and easy appetizer! Love this recipe!

Broiled Tilapia Parmesan

yum! This recipe is simply delicious! Followed instructions to the tee and it came out perfect. An instant family favorite from grandma to my 2 year old! The fish just melts in your mouth, amazing!

Beef Barley Vegetable Soup

Excellent soup! I don't know if it gets better the next day or not as my crew devoured it all in one sitting! I was hoping for extras to try and freeze as I was testing new recipes to stock the freezer for upcoming school season. This will not make the freezer list, but has become an instant family fav!

Baked Potato Salad I

I made this recipe for a family reunion and it went so fast I didn't even get a chance to try it! It must be super yummy though as I had people asking for the recipe months later! Every time we have a family get together they start raving about it all over again. Guess one of these days I'll have to break down and try it myself.

Louisiana Shrimp Creole II

My husband's grandmother came to visit and requested I make or take her out for shrimp creole. She is a VERY hard to please woman and I had never had it, let alone made it. I followed this recipe to the T and it was a HUGE hit! She is still raving about it months later. For my husband and I we now add a little more chili powder, hot sauce, and a bit of cayenne to spice it up, but even without the spice it has a super yummy flavor!
