Back-Burner Ratatouille

Reviewed: Oct. 6, 2012
I am trying this recipe today and I thought I'd share since I read someone saying it was a bit bitter. That is from the eggplant. If you first chop and soak eggplant in salt water for about 30 minutes, it takes that bitterness out of the eggplant and makes dishes with eggplant super enjoyable. Hope this helps!

Chicken Puffs

Reviewed: Jun. 16, 2012
These were delish the first time around so we made them again! Something I noticed is that you seem to need a little more dough than what is called for. Also, canned chicken worked wonderfully and the second time around we added sauteed broccoli! These are highly fattening so I try to make them seldom but when I do they are so hard to resist! Yum! Would love to find a alternative to the pillsbury dough though....I'm not much into processed foods etc. Overall....amazing and filling!! :)

Award Winning Soft Chocolate Chip Cookies

Reviewed: May 20, 2012
So mine came out beautiful looking at 9 minutes following the recipe exactly! ....or so I thought! ;) they came out tasting funny...a favor I couldn't make out from using vanilla pudding then my husband tasted them and said they taste like banana!!! Omgosh I checked the package and that's what I did wrong....mistakenly grabbed banana pudding instead of vanilla! Whoops....good thing they have nuts now they are a banana nut chocolate chip cookie! Hoping all the kiddos on our camping trip enjoy them anyway... Looking forward to trying them again with VANILLA pudding and giving rating! :)
