Easy Mint Chocolate Chip Ice Cream

I admit I am surpised by how good this ice cream is (not just good, its amazing!). I usually make ice cream with whole milk and I doubted the 2%'s ability to make a great ice cream. Well, it totally can! Like other reviewers I used mint extract instead of peppermint, and I used Oreos instead of chocolate chips. Only thing is it probably could have used more food coloring, it came out kinda greyish.

Big Al's K.C. Bar-B-Q Sauce

This is an AMAZING sauce. I make it in large quantities and jar it using the hot water bath canning method. Pint jars, process about 30 minutes (less might be fine but you can't overcook it or anything so better safe than sorry). The small amount of butter concerned me at first but it hasn't been a problem.

Peanut Butter Cupcakes

Very nice cupcakes! I used a "dark roast" peanut butter from Whole Foods that worked great. Using a portioner this recipe made 3 dozen easy. Looking at one of these cupcakes after baking, one can imagine that a peanut butter cookie wished that it were a cupcake and it came true. :) They really look like someone turned a pb cookie into a cupcake. I filled and topped mine with a chocolate frosting, because filled cupcakes are more fun. ;)

Black Ice

I'm sorry to say I don't much care for this frosting. It's got very little flavor, no sweetness at all, and has the consistency of congealed pudding. I needed to pipe it so I put it in a bowl to cool (with some cling wrap pressed against the surface since like a pudding it started forming a skin immediately). I got impatient and put it in the pastry bag hot (thank you Ove Glove) and it was good I did that because as it cooled it turned into cement that was impossible to force though my large star tip. I'm not saying that this was horrible, but it just wasn't good.

Award Winning Soft Chocolate Chip Cookies

MUY FABULOSO. I love oversized cookies - I always try out cookie recipes first with my giant, 1/4 cup scoop and if they don't come out well, make them with a regular cookie scoop. Well this one is fantastic with the giant scoop! 14 minutes baking time is perfect.

Peanut Butter Cake II

I made this cake for my parrot's birthday - yes, my parrot. She's eleven and she's had a rough year, so I wanted to make a cake in her favorite flavor. Chocolate is a no-no so I was glad to find a pb cake recipe that did not include chocolate. It was a big hit with both her and the humans. The frosting isn't as sweet as I was afraid it would be, which is great. I did have to add a little more cream to be able to spread the frosting, and it was still really sticky, but that was okay. Thanks for the great recipe!

Cream Cheese Penguins

It was actually many years ago that I made these, but I was going through my recipes from this site and thought I should write a review. These were a big hit at a New Year's party that I went to, and they really weren't all that hard to make. Anyone who wants to impress their guests should try it!

Best Lemonade Ever

I loved this! My dad gave me some Meyer's lemons from one of his trees that were like, hours from turning and I made them into this lemonade. Had to drink it quick, but that wasn't a problem. :)

Mexican Mole Sauce

My brother loves the mole chicken at a local restaurant, so I make this one at home every once in a while. It's not quite like theirs but at least he'll eat it! (That's saying something, my brother is very picky.)

I make this dish fairly often and I highly recommend it. I generally use less onion just because my family doesn't care for onion, but if your family likes onion don't cut back. :)

I'm sorry I didn't review this before...I actually made this dish for Easter several years ago and I still remember it. I use the marinade on occasion for other meats - I used it tonight for lamb chops.

Chocolate Chip Cookie Bars

There's nothing "wrong" with this recipe, but prepared as-is it's extremely dry and crumbly, more like shortbread. Which is fine, I like shortbread. But if you're looking for a chocolate chip cookie-like bar, this is not really the recipe for you.

Creamy Macaroni and Cheese

AWESOME recipe; I tried this after getting tired of struggling to make Alton Brown's baked mac n' cheese recipe come out right. I did make a few alterations: I substituted 1 pint of half and half instead of all the evaporated milk, I used 1 t dry mustard instead of the Dijon, I omitted the Parmesan entirely, and I added a few chunks of Velveeta. I also used mild cheddar instead of sharp because my brother doesn't like sharp, but I bet the sharp would be great (or even half mild and half sharp).

Eileen's Spicy Gingerbread Men

This recipe really is very good! I substituted brown sugar for the white as suggested by other reviewers but that's all I changed. I was surprised at how few cookies the recipe made though - only 6 large ones - so now I have to go make another batch. :) I refrigerated my dough overnight and it wasn't sticky at all, or perhaps I'm just used to dealing with so-called "sticky" dough.
