The Best Lemon Bars

Very tasty, although personally I think they could have used a little more tartness and lemon zest. (Other people were fairly evenly split on whether they were perfect or needed more lemon.) Following previous suggestions, I used 1/3 cup + 2 Tbsp. of lemon juice, added the zest of 1/2 lemon, and increased the flour to 1/3 cup, but next time I will add another 2 Tbsp of lemon juice and use the zest of an entire lemon. However, the lemon layer did set beautifully (in contrast to other lemon bar recipes I have tried), and the crust was wonderfully rich-tasting--I used salted butter, which gave a lovely flavor.

Ghraybeh Cookies

Quite tasty! The orange blossom flavor is nice and delicate, but the dough was very crumbly and hard to work with. I made some of mine with pistachios instead of almonds--tasted pretty good that way.

French Silk Chocolate Pie I

Good texture, but overly sweet. I followed Barb's suggestion to add two egg whites whipped with 1/4 cup sugar to the original recipe. The resulting pie had a lovely light texture (though my husband maintains that a real French silk pie should be denser), but it was too sweet, verging on cloying. I served it with whipped cream in a chocolate crust made from crushed wafers.

Grandma's Gingersnaps

Perfect chewy gingersnaps at 8.5 minutes in my oven. Used unsulphured molasses (Grandma's brand), and the cookies turned out beautifully with only a hint of the molasses flavor.

Crab Stuffed Flounder

Ok, but not great--the crab really overpowers the flounder, and for a recipe with so much expensive seafood I wasn't particularly impressed with the flavor. As suggested, I had increased the amount of mustard and worcestershire sauce, plus added some garlic salt, onion powder, parsley and chili powder to the filling. I also added 2 tsp. of lemon juice and a 1/2 tsp garlic salt to the butter that I spread over the fish and thinned out the mayo sauce with 2 Tbsp. of sherry.

Chicken with Chipotle

Easy and delicious! I didn't have any chicken bouillon, so I subbed a couple tablespoons of broth and some salt, which worked fine. I also doubled the chipotles to give it a little more kick and used skinless thigh cutlets to cut down on the fattiness (though you do lose the crispy texture). Still turned out great!

Chocolate Chip Muffins

Ok, but I won't make them again. The topping was too much pure sugar--could probably benefit from some butter and cinnamon, while the muffin cake itself needed a little more sweetness.
