Out of this World Turkey Brine

I made two turkeys this week (they were on sale). I did what Secret Agent suggested and used a washed out cooler to brine the two. The first turkey I soaked for only about 5 hours and it was just ok (cooked in a bag). However, the second one - OUT OF THIS WORLD is right. It was the very BEST turkey that I have ever ever made... EXCELLENT. The flavor was wonderful !! Thank you so much, I will never cook another turkey without brining it like this again. (I used fresh garlic and Rock Salt since I didn't have any other kind of salt)

Simple Beef Stroganoff

This is good, but wanted to pass along this hint: try adding a package of DRY HIDDEN VALLEY RANCH dressing mix to it... oh my gosh - it is SO GOOD!

Neiman Marcus Cake II

I used LEMON CAKE MIX - added chopped PECANS to the cake mixture, and even added some to the top of the cake mixture (we like pecans). I then put a thin layer of sweetened COCONUT on top of the chopped pecans, then the cream cheese layer. To the cream cheese mixture I used TWO PKGS of cream cheese (to make it more cream cheesey and less sweet) less powder sugar probably 2 1/2 cups (since the coconut was sweet) AND I added ALMOND extract (2 TBLBS) to the cream cheese mixture. Let me tell you - it was GOOD !!!!! My daughter (who mostly likes chocolate) LOVED IT!!!! Will DEFINITELY MAKE THIS ONE AGAIN! THANK YOU !

Gaye's Microwave Fudge

I have made this many many times... I like it a little better with less coco (I like milk choc more than dark choc), but either way everyone that tries it says it tastes just like the kind you have to stand and stir over the stove! I've put pecans in some batches and love it. The trick to getting it to set right is to make sure the milk and butter get HOT. Also, it helps if you sift your sugar together with the coco so it is already mixed for the most part (I have even heated the milk and butter in the microwave, then mixed in with the sugar and coco - then added the vanilla last). Make sure you stir REALLY fast and pour before it gets cool... that way it leaves a nice shiny top - if you stir after it cools it looks a little lumpy on top. I also line my pan with foil so it is easy to lift out and cut into squares.

Sopapilla Cheesecake Dessert

Just a note there is another listed "Cream Cheese Squares" that is the same w/o the nuts - whichever way you make it - DELICIOUS. (if you want to add a flavor, try raspberry pie filling on top of cheese layer, then the other layer of dough & cinn & sugar; or Lemon Curd/pie filling - heaven!!)

Easy Mint Chocolate Chip Ice Cream

My daughter and I made this for our family this Memorial Day Weekend.... EVERYONE loved it. THANKS FOR SHARING. It was so easy and froze well. Everyone raved about it - I personally didn't like the mini choc. chips, I preferred leaving them out and adding Choc. syrup. I think I might try using Milk Choc chips next time (putting them through the food processor so they are little).

Scottish Butter Tablet

I used a candy thermometer & it took forever to reach 235-240° almost 40 mins. Used another's suggestion with using wisk while on the stove and hand mixer afterwards, which worked well. This tastes a lot like the sugary (a little grainy) Canadian Maple candy. It was good, my husband LOVES it.

Spinach and Sun-Dried Tomato Pasta

I know, I know, we all hate it when we change the recipe & then rate it high... We LOVED it and I changed it by: using bow tie pasta, Sun Dried Toms (from Costoc) in OIL - lots of them!, rotisserie chicken, lots of red pepper flakes (cooked with garlic and sun dried toms in lots of olive oil). After the pasta COOLED, I added small diced Monterey Jack cheese cubes and lots of OLIVES and a little more olive oil to make a light sauce. We loved it... husband took it to work (fire station) and they loved it there too!

Eggnog Quick Bread

Excellent - after we changed a few things... the first batch was a little flat and dry, but the flavor was wonderful. So, we added more baking powder and more butter... used real rum instead of extract. We have made MANY batches this Christmas... given many away for gifts (only to have them come back begging to know how we made it!) My sister and I thought we would try another batch soon and maybe add MACADAMIAS and possibly white choc. chips !?!? Yummy.

Cheesecake Supreme

EXCELLENT! Did follow the top 2 reviewers suggestion of: Vanilla in cheeseckae mixture, less sugar in crust, 200 for 3 hours + 10 mins, didn't open door - just left it in there until cool. At least a day in fridge (covered with clingwrap). Only suggestion that I should have done was CARDBOARD on bottom of spring-pan. Will do that next time. THANK YOU YOU! EXCELLENT! Better than Cheesecake Factory by far.... so CREAMY.

Maybe mine came our PERFECT because I DOUBLED it; used 3/4 butter and used 1 C. PB. I have also used BROWNIE MIX - which is my husband's favorite since it's a little more gooier. I have also tried this with Vanilla mix & lemon pie filling (3/4 can). I have also tried this with Vanilla mix and raspberry pie filling (3/4 can) UMMMM YUMMY ! TAKE OUT BEFORE YOU THINK IT'S COOKED ALL THE WAY... that's why it's dry.

Cake Mix Cinnamon Rolls

After reading reviews, I thought,"now, this is one thing with yeast that I can't mess up" - I was wrong. I let it bubble & get creamy (so it was not old), I added as indicated - the dough doubled in size the first time, then I think maybe I made the mistake of trying to let it rise a second time - it did, but then when I rolled it out, added the sugar, etc. then formed the rolls, it didn't rise again - that was it.... I baked anyways hoping that after ALL THAT TIME AND EFFORT AND EXPENSE that they would rise while baking... nope. Hard as bricks. Ugh... maybe the secret is ONLY LET THEM RISE ONCE, THEN ROLL INTO BUNS... because trying to let it rise twice sure didn't work. I thought maybe they would be more fluffy and airy if I let them rise twice. Live & learn.

Awesome Carrot Cake with Cream Cheese Frosting

MUST USE 1/2 APPLESAUCE for the oil! Otherwise way too oily. Grated the carrots SMALL so mixes in with the rest of the ingredients. I took the suggestions of other reviewers – ½ APPLESAUCE for the oil, boiled raisins in rum before adding, added 1 c. sweet small flaked coconut and 1 large can crushed drained pineapple, much much much better than the other one on this site that got over 1500 reviews. (because I am HIGH ALTITUDE I also had to add 3/4 c. more flour which we have to do with most recipes)

Barbecue Beef Cups

I have made these for years... my kids love 'em! You can also add corn to the meat - it's a good mixture. I usually use a honey bbq sauce (kids seem to like it better that way). I have also used baked beans (the brown sugar ones) - the kids loved those too. They tend to like sliced American cheese rather than the sharp cheese (I like the sharp cheese better). I have also mixed in Velveta cheese in with the meat to make it creamy. This is one dish that we always make on Halloween - they are easy to eat with the fingers while running out the door.

Baked Pineapple Casserole

My sister made this for one of Christmas gatherings with the entire family... and we have a large famiy of PICKY eaters... EVERYONE loved it... it was the first thing to be completely gone :) The kids even liked it... the adults LOVED it!! We will defintely make this again and again.

Lemon Cheese Cake

I can't believe that there is actually a cake called LEMON CHEESE CAKE! My grandmother has a recipe like this (not cake mix) but my sister and I always wondered why it was called what it was called. WE LOVE THIS CAKE - love it love it love it. (I like it when the filling is a little grainy - not completely smooth - sorta like a crust). You don't want to leave the ZEST out, it's so good... adds even more zip! It's really good with the zest and worth it. (matter of fact we like it with bigger zest, not the tiny)

Carrot Cake III

Sorry, I guess I am in the minority here with my opinion of this recipe - not good – way too OILY. I followed it exactly and didn’t take other reviewers suggestions (using half APPLESAUCE for the oil is a must). I also grated the carrots large, that too was a mistake, they should be small to mix in with the rest of the ingredients. Did not like this one at all. I tried another recipe on this site: Awesome Carrot Cake with Cream Cheese Frosting – but this time I took the suggestions of other reviewers – ½ APPLESAUCE for the oil, boiled raisins in rum before adding, added 1 c. sweet small flaked coconut and 1 large can crushed drained pineapple… much much much better!

Honey Glazed Ham
