Buckeye Balls I

Wonderful. I made mine dime size which worked well. I also used Gulf Brand parafin wax - seems to work better than shorting. Laura Scudder's peanutbetter works better than some of the other off brand kinds. Imperial Marg (2 sticks) is what I used instead of butter, which might have helped the mixture be perfect for rolling. In some of my batch I added super crushed vanilla wafers - made it not so strong for those that like a lighter taste of peanuts.

Congo Bars I

I thought I remembered loving these bars but after my son and I made them... I wasn't so sure. I think they might have needed some white sugar.... they just didn't taste "right" (we didn't use nuts) maybe not sweet enough??

No Bake Cookies III

I grew up on these! Absolutely delicious! I also let it come to a FULL BOIL THEN start the timing -(1 to 2 mins) It's almost like candy so it needs to hit the right temp to 'set' correctly. (don't overcook or they will be too crumbly. I like to use extra crunchy peanut butter and a little less coco, but my kids perfer creamy and lots of coco - we've even added raisins for a nice change. The coconut idea sounds like something we will have to try. A word of warning for those of you in rainy areas... since it is a little like candy, the rainy days are not good days to make these (we have made some on rainy days and they are a little gooie and don't set right).

Gaye's Microwave Fudge

I have made this many many times... I like it a little better with less coco (I like milk choc more than dark choc), but either way everyone that tries it says it tastes just like the kind you have to stand and stir over the stove! I've put pecans in some batches and love it. The trick to getting it to set right is to make sure the milk and butter get HOT. Also, it helps if you sift your sugar together with the coco so it is already mixed for the most part (I have even heated the milk and butter in the microwave, then mixed in with the sugar and coco - then added the vanilla last). Make sure you stir REALLY fast and pour before it gets cool... that way it leaves a nice shiny top - if you stir after it cools it looks a little lumpy on top. I also line my pan with foil so it is easy to lift out and cut into squares.

Easy Mint Chocolate Chip Ice Cream

My daughter and I made this for our family this Memorial Day Weekend.... EVERYONE loved it. THANKS FOR SHARING. It was so easy and froze well. Everyone raved about it - I personally didn't like the mini choc. chips, I preferred leaving them out and adding Choc. syrup. I think I might try using Milk Choc chips next time (putting them through the food processor so they are little).

Barbecue Beef Cups

I have made these for years... my kids love 'em! You can also add corn to the meat - it's a good mixture. I usually use a honey bbq sauce (kids seem to like it better that way). I have also used baked beans (the brown sugar ones) - the kids loved those too. They tend to like sliced American cheese rather than the sharp cheese (I like the sharp cheese better). I have also mixed in Velveta cheese in with the meat to make it creamy. This is one dish that we always make on Halloween - they are easy to eat with the fingers while running out the door.

Baked Pineapple Casserole

My sister made this for one of Christmas gatherings with the entire family... and we have a large famiy of PICKY eaters... EVERYONE loved it... it was the first thing to be completely gone :) The kids even liked it... the adults LOVED it!! We will defintely make this again and again.

Eggnog Quick Bread

Excellent - after we changed a few things... the first batch was a little flat and dry, but the flavor was wonderful. So, we added more baking powder and more butter... used real rum instead of extract. We have made MANY batches this Christmas... given many away for gifts (only to have them come back begging to know how we made it!) My sister and I thought we would try another batch soon and maybe add MACADAMIAS and possibly white choc. chips !?!? Yummy.
