Sugar Cream Pie I

I forgot the vanilla - so it turned out a little 'plain' but oh SO GOOD. My husband and I kept coming up with other ings that we could put in it next time (becuase there will be many more next times with this pie) - you could add any extract and it would make an EXCELLENT cream pie, coconut, maple, rum, or even add some pineapple, etc. So smooth, creamy - I used Marie Calendar's ready made pie crust and it was great.

Bill Clinton's Lemon Chess Pie

Did what another suggested: instead of one pie, replace milk with half and half and increase lemon juice to 1/2 cup - used lemon zest of 2 large lemons. EXCELLENT ! Smooth, creamy, just excellent. THANK YOU

Awesome Carrot Cake with Cream Cheese Frosting

MUST USE 1/2 APPLESAUCE for the oil! Otherwise way too oily. Grated the carrots SMALL so mixes in with the rest of the ingredients. I took the suggestions of other reviewers – ½ APPLESAUCE for the oil, boiled raisins in rum before adding, added 1 c. sweet small flaked coconut and 1 large can crushed drained pineapple, much much much better than the other one on this site that got over 1500 reviews. (because I am HIGH ALTITUDE I also had to add 3/4 c. more flour which we have to do with most recipes)

Carrot Cake III

Sorry, I guess I am in the minority here with my opinion of this recipe - not good – way too OILY. I followed it exactly and didn’t take other reviewers suggestions (using half APPLESAUCE for the oil is a must). I also grated the carrots large, that too was a mistake, they should be small to mix in with the rest of the ingredients. Did not like this one at all. I tried another recipe on this site: Awesome Carrot Cake with Cream Cheese Frosting – but this time I took the suggestions of other reviewers – ½ APPLESAUCE for the oil, boiled raisins in rum before adding, added 1 c. sweet small flaked coconut and 1 large can crushed drained pineapple… much much much better!

Uglies

We also call these Barbecups! I make with the GRANDS (butter) biscuits, use Honey BBQ Sauce (we don't add onions or garlic); make sure the sauce/meat is 'wet' with sauce before putting into oven. Sometimes I add yellow corn. I don't rool out, just smash with fingers to fit into muffin tin, add the meat mixture and with shred. Mex. Cheese blend. This is a MUST have for Halloween Night, the kids can grab and run out the door for their trick-or-treating!

Cream Cheese Squares

** update: layer of LEMON CURD (pie filling) on top of cheese layer, wonderful! My husband's FAVORITE is the Raspberry Pie Filling layer on top of the cheese layer! **** Did as others suggested and added a layer of stawberry jam (1/2 jam, 1/2 sugarfree jam) on cream cheese layer, then put the second layer of dough. Also sprinkled cinn & sugar on top. EXCELLENT. Remember to let cool as it was so much better after in the fridge over night. The person that suggested putting foil on bottom of dish - good suggestion, will do that next time. Thanks for sharing!

Scottish Butter Tablet

I used a candy thermometer & it took forever to reach 235-240° almost 40 mins. Used another's suggestion with using wisk while on the stove and hand mixer afterwards, which worked well. This tastes a lot like the sugary (a little grainy) Canadian Maple candy. It was good, my husband LOVES it.

Simple Scones

EXCELLENT and easy. I used Almond flavoring and white chocolate chips! I think the almond flavoring made it. Also tried butterscotch chips, those were good too. Brushed with a beaten egg to give them golden brown color. These were Delicious! I did not have a mixer and it was just fine with using a small hand held butter masher, and then hands.

Gooey Butter Cake II

Was told it was like “crack” – I am assuming that was a COMPLIMENT!?! I did what others suggested: DOUBLED the recipe and added some milk to cake mix part to make more moist, also used a Chocolate Mix. Added a little more Almond extract, and LESS Powdered sugar, and put crushed pecans on top. Used a smaller, deeper glass dish and then I got the rave reviews “can’t get enough” when I sent it to the fire station with my husband! They said out of all of the desserts I send, this one tops them ALL !

Turkey Shepherd's Pie

Out of this World Turkey Brine

I made two turkeys this week (they were on sale). I did what Secret Agent suggested and used a washed out cooler to brine the two. The first turkey I soaked for only about 5 hours and it was just ok (cooked in a bag). However, the second one - OUT OF THIS WORLD is right. It was the very BEST turkey that I have ever ever made... EXCELLENT. The flavor was wonderful !! Thank you so much, I will never cook another turkey without brining it like this again. (I used fresh garlic and Rock Salt since I didn't have any other kind of salt)

Neiman Marcus Cake II

I used LEMON CAKE MIX - added chopped PECANS to the cake mixture, and even added some to the top of the cake mixture (we like pecans). I then put a thin layer of sweetened COCONUT on top of the chopped pecans, then the cream cheese layer. To the cream cheese mixture I used TWO PKGS of cream cheese (to make it more cream cheesey and less sweet) less powder sugar probably 2 1/2 cups (since the coconut was sweet) AND I added ALMOND extract (2 TBLBS) to the cream cheese mixture. Let me tell you - it was GOOD !!!!! My daughter (who mostly likes chocolate) LOVED IT!!!! Will DEFINITELY MAKE THIS ONE AGAIN! THANK YOU !

Trainor Family Cranberry Salad

My family makes something like this, but we have never added lemon. We do add a lot of coconut which helps it keep it shape (put it in a jello mold and it is very pretty to set on the table).

Amy's Chocolate Chip Cookies

This is truly a great and easy recipe! I needed something to make for teacher appreciation day and these were perfect! I added just a little more white sugar (I like them a little sweet) So if you don't like overly sweet, follow exactly. I also used self rising flour just because I had it, I used vanilla pudding and semi sweet chips - DELICIOUS. This is the very first cookie that I have made that has come out fluffy and not flat as a pancake. THANK YOU
